My grocery store sells chipotle peppers in adobe in 12-ounce cans only. I never use more than one at a time. How do I store the leftovers? Can I freeze them?

Yes you can (or you can just send the leftovers to Jewel!). I have some in my freezer now! I just layed them out individually on a baking sheet lined with wax paper and popped it in the freezer for awhile. Once partially frozen, I stuck them in a freezer bag. I don't even know how long it would take me to use up a 12-oz can http://www.cookinglight.com/bbs/wink.gif !!

BTW, I should note that I found out you could freeze chipotles here on this BB!!

As for freezing, I lay them on wax paper long enough for them to get firm, then vac-pack into a FoodSaver bag!

Thanks, SoCal and Jewel! It's not that they're so expensive, but I reeeeeally hate to waste ingredients that are tough to find in the first place.

oh my, don't throw them out! I have kept them in a sealed tupperware in my refrigerator for 3 months and they have been just fine. I promise.

Val is right -- I keep mine in the fridge (pretty indefinitely) and have never had a problem with mold or other spoilage.

I think the little suckers are so hot they scare away bacteria http://www.cookinglight.com/bbs/smile.gif
