I used a tad less olive oil but I have to tell you not only did I enjoy them last night but the house was quite fragrant this morning. I froze most of them and will cook them this summer. I hope that you enjoy!!

Stuffed Grapevine Leaves (Dolmades)

1. 1 lg jar grapevine leaves (1lb 8 oz)
Rinse in cool water and cover with water to remove some of the brine while you prepare the stuffing.

2. Combine in food processor and finely process:
1 bunch of parsley chopped
4 bunches of scallions
¼ c chopped fresh dill
¼ c chopped fresh mint
2 T salt
½ t pepper

3. Put ingredients into a large frying pan and saute with
3 T olive oil
some water
2 c long grain rice

4. Saute for a few minutes to wilt the herbs and onions.

5. Carefully separate leaves and cut off the thick stems. Place 1t of filling on the underside of the leaf and fold bottom, sides then top.

6. Arrange in layers in deep saucepan adding 3 T olive oil, juice of one lemon, and water to almost cover the rolls. Cover and slowly cook for about 45 minutes, until the rice is tender.(I used 1 T of oil)

7. You can freeze them uncooked.

8. Makes about 100 rolls! For smaller quantity, use half the ingredients and 12 oz. jar of grape leaves.
