Is this anyone else's favorite Cooking LIght recipe? I think that it was in the July/Aug 98 issue.

I thought I would share this as we can finally get yummi nectarines in the store.

Pan-Seared Pork Cutlets With Nectarine Salsa
Categories: Pork
Yield: 4 Servings

2 t Chili Powder
1 t Coriander,Ground
1/2 t Cumin,Ground
1/2 t Paprika
1/4 t Salt
1/4 t Pepper
8 oz Pork Loin cutlets
1 t Olive Oil
Cooking Spray
1/2 c Bottled Salsa
1/4 c Apricot Preserves
4 c Sliced Nectarines,Peeled
1/4 c Fresh Cilantro,Chopped
2 T Fresh Oregano,Chopped

Combine first 6 ingredients; rub mixture over both sides of pork. Heat oil in a large nonstick skillet coated with cooking spray over medium-high heat. Add pork, and saut 2 minutes on each side or until done. Remove from pan; keep warm. Add salsa and preserves to skillet, and bring to a boil. Cook 1 minute. Stir in the nectarine slices, cilantro, and oregano, and cook mixture 1 minute or until thoroughly heated. Serve salsa with pork. Serving size: 2 cutlets and 1 cup salsa

I made it the other night and it gets me all excited that summer is here with the yummy fresh nectarine! I hope you like it as much as my family and friends do!
