View Full Version : Review: Marinated Orange-Strawberry Salad (JUL/AUG '94)

Just made this salad again this weekend and thought I'd share the recipe with those of you who didn't get CL back then. The strawberry and orange combination is very tasty, and the marinade gives the salad a nice bit of spice. It's one of our favorite summer salads - hope you enjoy it!

Marinated Orange-Strawberry Salad
from Cooking Light, July/August 1994

2 cups orange sections
1 1/2 cups sliced fresh strawberries
1/4 teaspoon ground cinnamon
1/4 teaspoon ground black pepper
1/8 teaspoon salt
1 tablespoon honey
1 teaspoon olive oil
3 cups tightly packed torn leaf lettuce
1 tablespoon pine nuts, toasted

Combine first 7 ingredients in a large bowl, tossing gently. Let stand 30 minutes. Add lettuce and pine nuts, tossing gently to coat. Yield: 4 servings.

Thanks for reminding me of this salad! We loved it! And I do have the nutritional info from CookPac:

CALORIES 111 (30% from fat); PROTEIN 2g; FAT 3.7g (sat 0.5g, mono 1.7g, poly 1.2g); CARB 20.6g; FIBER 6g; CHOL 0mg; IRON 0.7mg; SODIUM 77mg; CALC 55mg

Thank you so much for posting your reviews and recipe for this wonderful salad. I am always on the look-out for simple yet interesting salads, both in taste and presentation ( I get so bored with the traditional lettuce/tomato and ranch dressing).

My only question is.... is leaf lettuce as good for you as romaine or is it as un-nutritional as ice-burg? I did buy the leaf lettuce as called for (and really enjoyed it) but do want to make sure that I'm eating a good-for-you lettuce.

Another thanks for the reminder about this great summer salad! I had made it last year from the Complete CL Cookbook and forgotten about it until now.

Christine - It is my understanding that the leaf lettuces are as nutritional as romaine.

Thanks for this recepi. I made it tonight and it was great. I used romaine.
