Does anyone have a good recipe for light shortcakes? Or has anyone tried the CL one from May, 2000 (brown sugar shortcakes)? We're trying to find a nice light brunch dessert for Fathers Day, and my Dad loves strawberry shortcake.

I dont have an actual recipe, but I LOVE angelfood cake with strawberries and whipped cream!

I picked strawberries today - my eyes are bigger than my stomach - I have 11 lbs of them! (this always happens to me). I baked the Lemon Sponge Cake with Strawberry Filling from May 01, but haven't eaten it yet...it looks pretty good.
My old reliable is angel food cake with strawberries - I love that!

We love the angel food and strawberries thing too, but it seems that's what we always end up having. We were trying to come up with something different this time, but I think I got myself in over my head! I'll try the brown sugar ones and let you know how they turn out.

I can say that the lemon spongecake is very good! My friends thought it was incredible, and it is actually pretty easy!

Old-Fashioned Strawberry Shortcakes

3 1/2 cups halved strawberries -- divided
1/3 cup sugar
1/3 cup orange juice
2 teaspoons vanilla extract
1 teaspoon lemon juice
1 1/4 cups all-purpose flour
3 tablespoons sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/8 teaspoon salt
3 tablespoons chilled stick margarine or butter -- cut into small pieces
1/2 cup low-fat buttermilk
Cooking spray
6 tablespoons frozen reduced-calorie whipped topping -- thawed
Whole strawberries (optional)
Combine 1 cup strawberry halves, 1/3 cup sugar, orange juice, vanilla, and lemon juice in a bowl, and mash with a potato masher. Stir in 2 1/2 cups strawberry halves. Cover and chill.
Preheat oven to 425º.
Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, 3 tablespoons sugar, baking powder, baking soda, and salt in a bowl; cut in margarine with a pastry blender or 2 knives until mixture resembles coarse meal. Add buttermilk, stirring just until moist (dough will be sticky).
Turn dough out onto a lightly floured surface, and knead lightly 4 times with floured hands. Pat dough into a 6 × 4-inch rectangle. Cut dough into 6 squares. Place 1 inch apart on a baking sheet coated with cooking spray. Bake at 425º for 12 minutes. Cool on a wire rack.
Split shortcakes in half horizontally using a serrated knife; place each bottom half on a dessert plate. Spoon 1/4 cup strawberry mixture over each bottom half. Top with shortcake tops; spoon 1/4 cup strawberry mixture over each top. Top each serving with 1 tablespoon whipped topping; garnish with whole strawberries, if desired.

I can vouch for the Old-Fashioned Strawberry Shortcakes posted above. They are AWESOME, and I have made them MANY times! One thing I do add though, is a tblsp. or so of triple sec or any orange flavored liquor to the strawberry mixture!! Oh man, this one is good. I just bought fresh strawberries at the farmers market (you know, the ones that actually have TASTE?!! - as opposed to the flavorless ones from the grocery store!), so I think I will be making this tomorrow myself. You can make great strawberry shortcakes with Bisquick, surprisingly. Even the reduced-fat Bisquick works well. However, I'll share a CL recipe I have for strawberry shortcakes.
from Cooking Light July/August 1994
2 c. flour
1/4 c. sugar
2 tsp. baking powder
1/4 teaspoon each baking soda and salt
3 tbsp. plus 1 tsp. chilled butter
3/4 c. buttermilk
1 lightly beaten wgg white
1 1/2 tsp. sugar
4 c. sliced fresh strawberries
1 tbsp. sugar
1/4 c. red currant jelly
2 tbsp. water
1/2 c. thawed reduced calorie frozen whipped topping
Combine first 5 ingredients in a bowl. Cut in butter with a pastry blender until mixture resembles coarse crumbs. Add buttermilk, and stir just until dry ingredients are moistened. Turn dough out onto a heavily floured surface. Knead 5 to 6 times. Roll 1/2 inch thick, and cut with a 3-inch round cutter. Place on a baking sheet, and brush tops with egg white and 1 1/2 tsp. sugar. Bake at 450 degrees 12 minutes or until golden. Split biscuits; place bottom halves on individual serving plates. To make topping, combine strawberries and 1 tbsp. sugar and let stand 30 min. Combine jelly and water in a small saucepan; place over low heat. Cook, stirring until jelly melts. Remove and stir in strawberry mixture. Spoon into a bowl; cover and chill. (Makes 4 cups) Spoon 1/2 cup strawberry topping over each half, and top with the other half. Spoon 1 tbsp. whipped topping over each shortcake. Serves 8. (250 calories, 6 g. fat)
It should be reltively easy to find lowfat strawberry shortackes in cookbooks and online.
