This is not a CL recipe but is low-fat so I thought I would share with you all. My father-in-law gave it to me and told me that it won the Pace Picante Salsa $1M cookoff. It is absolutely delicious!

Name: Million Dollar Chicken Recipe
Serves: 4
Ingredients:
4 chicken breasts, boneless, skinless
1 clove garlic, minced
1/2 small onion, minced
1/4 tsp cumin
1 cup salsa
1 tsp cinnamon
1/2 cup raisins

Instructions:

Brown chicken in oil about 5 min. Remove from heat. Saute onion and garlic, add the rest of ingredients and simmer 15 to 20 min. Serve with rice. >>

When I made this a few weeks ago, I wrote that I absolutely loved it and even ate leftovers for breakfast the next morning. After listening to me gush about it many times since then, my husband admitted that he hated it--he didn't dislike it, he hated it. I though I had just given him too much. Since we like most of the same foods, I haven't figured out what the problem was. Anyhow, I now have the perfect dish to make when he's not home for dinner!

PaAce has also published a recipe with chicken breasts, picante sauce and dijon mustard. It is also very simple, lowfat and good.

Susan - I made this while the bbs were down. It is easy and yummi! Very flavorful! Definetely will make again!
