This question is one I should know the answer to but don't. What is the best way to peel kiwi without losing so much of the fruit?
I usually like to just cut it in half and then take a spoon to scoop out the fruit on the inside.....that way you can get most all of the fruit!!
I'm not quite sure how to skin it w/o losing some of the fruit.......

I was going to say the same as Amy but didn't know how to describe it for you. I also just take a paring knife and just peel away the skin as thin as I can.

I usually cut off the ends, then scoop around the entire peel with a regular spoon. Works like a charm.

I learned how to peel Kiwi from a Culinary Institute grad knew. This method only works well if you are planning to have kiwi slices.
Using a sharp paring knife, cut the entire kiwi into slices as thick or as thin as you prefer, with the skin still on. Then, take oneof the slices and gently slice through just the skin and peel it off like a piece of cold cut rind. If the skin sticks too much, then simply place the slice flat on your cutting board and cut around the inner edge - you will end up with a cleanly cut piece of fruit. This method works so well and is very speedy if you are handy with your knife.

I like heatherfeather's technique a lot for making pretty slices. If I want to work a little faster, here's another trick.
Peel the skin carefully with a paring knife in thin strips toward the stem end of the fruit. BUT, don't cut the strips off when you get to the end; just leave them hanging. When you've peeled the whole kiwi, grab the strips of peel like a handle. Now you can steadily slice the kiwi, which is so slippery otherwise.
