Not only is this salad beautiful, it is also very, very good. We had fried chicken, this salad, watermelon and brownies for lunch. It was a perfect lunch.

Lebanese Fatoush Salad


Chop and cut for this wonderful sweet pepper, cucumber, onion and tomato salad.


Ingredients
1 cup red bell pepper strips
1 cup green bell pepper strips
1 cup thinly sliced peeled cucumber
1/2 cup thinly sliced onion
2 tablespoons chopped fresh mint
2 tablespoons chopped fresh cilantro
2 tablespoons fresh lemon juice
2 teaspoons extra-virgin olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tomatoes, cut into 1/4-inch-thick wedges (about 1/2 pound)
1 (6-inch) pita, toasted and torn into bite-size pieces


Directions
Estimated Total Time: 30 minutes

Combine all the ingredients in a bowl, and toss gently to coat.

This looks delicious! Thanks. I am already becoming overwhelmed by produce from the garden -- this recipe will help me use some of it! Gaye
