Hello everyone! Someone once made me an Italian dish with chicken, pepperoni, and tomato sauce in it. Unfortunately, that's all I can remember about it. It probably doesn't fall in the realm of CL, b/c there was alot of pepperoni, but it was SO good! Does anyone have any recipes resembling this?

You could probably use turkey pepperoni, if you wanted to lighten these.

This has been one of my favorite foods for a long time, but I don't actually have a recipe! I got tired of searching for the perfect Chicken Pepperoni recipe so I came up with my own. It's one of my 'stuffed chicken' recipes that my DH loves because he never knows what's lurking in his chicken when he cuts into it! These quantities are approximate 'cause I do a toss 'n throw:

Chicken Pepperoni
4 boneless/skinless chicken breasts
4 cloves garlic, minced or pressed
salt and pepper to taste
1-2 tsp Italian Seasoning
1 package Turkey Pepperoni, divided
10-12oz lowfat Mozzarella cheese, shredded
1 cup seasoned bread crumbs
1/2 cup grated Parmesan
1/4 cup flour
2 eggs
2-3 cups Pasta OR Pizza Sauce (I mix the two)
Preheat oven to 350 deg. Combine bread crumbs and Parmesan Cheese in a shallow bowl, set aside. Pound chicken breasts between two pieces of plastic wrap to 1/4" thickness. Sprinkle each chicken breast with salt and pepper, italian seasoning, and approximately one clove of the minced or pressed garlic. Place 6 or 7 slices of turkey pepperoni and approximately 1/4 cup shredded mozzarella in the center of each chicken breast, roll tightly and secure with toothpicks. Mix eggs with 1 TBS water in a shallow dish. Coat chicken rolls with flour, dip into egg wash, then coat with bread crumb mixture. Place in 9 x 12 baking dish coated with cooking spray, and bake for 20 minutes or until golden, crispy and almost done. Spray breasts with cooking spray during baking to crisp the crumb coating.
Chop remaining turkey pepperoni into pieces, equaling approximately 1/2 cup. Add to pasta or pizza sauce in a medium saucepan and heat through. Ten mintues before chicken is done spoon Pepperoni Pasta Sauce over chicken breasts, top with remaining shredded Mozzarella and finish baking till cheese is golden and bubbly.

Wow, Jewel, that recipe sounds like it's right up our alley. I'll try it (when the temp goes back below 80 or so ... sweltering here today). If it's as good as your Cheesy Chicken Chowder (I think that's your recipe), I know we're in for a treat! Thanks for posting.
