I thought this was a nice weeknight dish as it was very easy to put together. Everything is mixed in the same dish you bake it in which also makes cleaning up easier.

I though it had a nice, subtle, fresh flavor to it, but DH thought it was bland and added Zatarain's seasoning (you can take the boy out of Acadiana, but you can't take the Cajun out of the boy).

I used tilapia instead of snapper, and only used red tomatoes because I couldn't find yellow ones. I served it with couscous and grilled yellow squash. A nice summer meal.

Thanks for the review and had to say that I was in Acadia for the first time last week, what beautiful country!

I made this last week during the BB blackout. wish i had been able to see reviews on this one. I found it to be quite bland too. I did give a generous sprinkle of cayenne pepper to it. ( i confess)
I served it over white rice. I also found that there was too much liquid in the end product. The yellow tomatoes were very colorful.
