I'm looking for a reduced-sugar Angel Food cake that I can make for Father's Day. Any great recipes out there? Also, do you know how long egg whites can be at room temperature? Thanks in advance for any ideas! Appreciate it.

I don't have the answer to your specific question, but I do know that the sugar sub Splenda can be used in baking. They may have a website

Have you ever tried the Angel food Cake mix with a can of crushed pineapples is light syrup? Or would this be too much sugar??? If you like the Idea you just mix the cake mix and the entire can of pineapples poor into a oblong baking dish and bake according to the directions on the box.

You'll need to find a recipe in a diabetic cookbook. The sugar forms the structure of the cake, so it is an essential ingredient. You can't just substitute Equal or other artificial sweeteners because they require less volume than sugar, so you'd have a small, dense cake. This is one recipe that I wouldn't try to do a lot of experimentation with. The chemistry of an angel food cake is quite complex & delicate. You may want to search under diabetic in the archives for appropriate websites. Sorry I can't help more...

I meant to post this earlier in the weekend. While browsing at a bookstore, I noticed the diabetic cookbooks and checked to see if any of them had an angel food cake. One did. I think the book was called Diabetic Delights...it had a yummy-looking cake on the cover. I didn't have time to write down the recipe...just wanted to let you know there is definitely a recipe out there. I did look long enough to see that it has 12 egg whites and one cup of sugar! Sorry...I can't remember what else. Good luck!!
