This past weekend I invited eight guests over for a barbeque, and we had a wonderful evening of eating and socializing. I made the Jamaican Jerk Pork Tenderloin, Boka Dushi, a Black Bean and Couscous Salad and a carrot cake. We also had a number of salads brought by friends.

I found the Black Bean and Couscous Salad on the recipe finder. I though this would pair well with the other items. It was light and refreshing, a must for orange lovers. My DH does not normally like couscous and he asked when I'll be making this again.

My guests absolutely raved about the Boka Dushi, especially the peanut sauce. They claimed it was better than any resaurant and couldn't believe it was light. I think I sold two new Cooking Light subscriptions.
