I've got the weekend to myself, the DH is on a backpacking trip (I couldn't get the time off http://www.cookinglight.com/bbs/frown.gif). What do you all love to fix to eat when you have no one to cook for but yourself? Healthy or sinful...whatever you love best!

I know there was a thread about this before, but when my husband's out of town, I like to make veggie sandwiches and the like. Can't beat a 'shroom sandwich with melted cheese! I also tend to "turn up the heat" on whatever I make since he doesn't like spicy things.

OK, none of you will tell my husband or my mom, right?

A whole box of Velveeta Shells & Cheese which really only makes one bowl...OK, a big bowl. Kraft Deluxe will work if the store is out of Velveeta Shells.

I follow that up with a king size box of Hot Tamales candies. I'm a cinnamon junkie. http://www.cookinglight.com/bbs/biggrin.gif No one will tell, right?

I pull the blue cheese out of its hiding place in the fridge.

Jewel, it's our secret! My favorite, although my DH knows this one, is a half a bag of Cheetos and a diet Coke (like the diet makes any difference after consuming all that junk food). My other sinful "dinner" is a little better, or at least a bit more refined. I like to have brie cheese on crackers, fruit and a nice glass of red wine. I usually have this and rent a "chick flick" http://www.cookinglight.com/bbs/wink.gif

Hob Nob cookies!! I buy a whole box, flop on the sofa and watch French Kiss while I eat the whole box.

Another favorite is a huge bowl of oatmeal with craisins and nuts and a few glasses of champagne.

Salmon! When I'm alone, there's no one around to complain about the way it smells when I cook it or reheat it and go on and on about how GROSS it is...

I'm glad you mentioned this subject. DH is leaving for Texas on the 26th, and he'll be gone a week. I can't wait to get take-out spicy squid from my favorite Korean place in town (DH despises the way it smells) and curl up with a bunch of chick flicks (or watch old favorites that I've seen a hundred times)! I'll probably do a lot of Chinese cooking while he's gone, too: ma po tofu, stir-fried veggies in oyster sauce, and dim sum. Yummmmmmy!

Looks like there's a few of us on our own this weekend!! DH is away on business this weekend so let the "chick flick" extravaganza (sp?) begin!!!

I must say I seem to have a lot in common with some of you. Chinese/Japanese food, especially sushi and dim sum (DH hates both), Cheetos, champagne/dry sparkling wine, exotic fruits and stinky cheeses ,just to name a few.

Basically 3 days of non stop grazing! (mooo)

So CHEERS to those of you on your own this weekend, eat, drink, pamper yourself and most of all enjoy the quiet! (if you don't have kids that is)hehe http://www.cookinglight.com/bbs/smile.gif

Well, my DH is gone A LOT! I cook things that he normally wouldn't care for. I love feta cheese and he doesn't so I cook things that have feta in them. I also love couscous and he doesn't so that is big on my list. Another biggie is rice. Both DD and I love rice but DH would rather have pasta or potatoes.

Shellfish! No one in my family eats it. So, it's a real treat when I can.

When hubby is gone, I don't cook. I might have a bag of microwave KETTLE POPCORN....a new favorite of mine. I just love it!

Cereal, cereal, and cereal. Cold, hot, doesn't matter. Craisins, Raisins, all good. Sometimes I go a little crazy and have applesauce. With my cereal, of course. m4star I will have to try the champagne and cereal combo http://www.cookinglight.com/bbs/smile.gif

Oh, and Russell Crowe movies.

Well... I have to admit that I don't cook usually when the hubster goes out of town. There is a super yummy Italian place nearby and I get one of their small pizzas with shrooms, artichokes etc- the stuff he hates. If I do cook its tofu stuff, veggie stuff etc.

The only time it's just me is when I'm on the road in a restaurant. Since I don't really have a favorite food (I like it all), I can just choose whatever I'm craving at the moment. http://www.cookinglight.com/bbs/wink.gif

DH is not much of a seafood eater, I am eating seafood a lot now.

If I am on my own for just one or two evenings, I will probably eat cereal or soft boiled eggs...DH does not like them. I can't figure out why! http://www.cookinglight.com/bbs/smile.gif

I usually watch late night TV infomercials while noshing on Cheese Doodles and Dr. Pepper. I am a cheese junkie. My DH is in England this week so I am feeling very much in a self-pity mode with 2 babies at home. So when the little ones go to bed I veg.. I also usually order out for Chinese food at this little hole in the wall that is so amazing.

Jewel, I'm with you on the Velveeta Shells and Cheese...DH can't stand it! The other thing is french fries with Ketchup (we usually don't ever have ketchup in the house, because DH can't stand it), usually I can do without it, but there are those moments when I self-indulge!!!

Nachos with lots of cheese, ranch dressing, green onions, avocado and spiced beef. He hates this kind of thing and it is so unhealthy that it is embarassing to eat it in front of anyone. Of course, my secret is now in cyberspace!

Tuna, noodles and mayo mixed together - carbs and fat all the way but I can eat it all with a good book. And I get the whole bed to myself!!!!! DH is going away next week and I've already got supplied laid in! http://www.cookinglight.com/bbs/wink.gif

There must be something about macaroni and cheese....

I like to eat a whole box of Shoprite shells and cheese by myself, sometimes w/ broccoli and extra cheese added.

Also, there's a chicken paprika dish i really like, but my DH hates the sauce, so i'll make it for myself when he's not around.

Hey Christina64, I just discovered Kettle Popcorn too. Isn't it the best? And I recently found a brand that has less fat than others I've seen, (and, God forgive me tried), it's called "Ye Old Kettle Korn". I ate half a bag last night and I loved it! It's made by a company of the same name that's located in Thousand Oaks, California.
So good....

I love my homemade bread, hot from the oven, slathered in butter or topped with creamy goat cheese. For dinner i can polish off at least 1/2 a loaf by myself!!!
At times I believe that man/woman could survive on bread alone. I suppose that's why I am a baker! http://www.cookinglight.com/bbs/smile.gif

I'm partial to Annie's alfredo shells and cheese, with a little broccoli mixed in if I'm feeling virtuous.

Also... a baked thing called cauliflower-tomato-cheese. It's basically cauliflower that you cut up, boil, bathe in a quick tomato sauce, top with cheese, and broil til bubbly. My fiance hates cauliflower and I love it...

Another baked thing which is pretty awful sounding but comforting... I mix a can of baked beans, a can of kidney beans, and a cup of frozen corn, then top with bread crumbs and cheese and bake. My fiance can't stand this either.

My #1 thing to eat when I'm alone, though, is english muffin-melts! Split a muffin, top it with goodies from the fridge, and pop into the toaster oven for 5 minutes. Sometimes I do pizza toppings, sometimes apples and cheese, sometimes veggies and cheese. I keep english muffins in the freezer just so I can make these! Mmmmm.

Sushi-girl, checking in. Or I love to eat pizza dipped in ranch dressing (especially the crust). I know it sounds nasty, but it's yummy. Saturdays (alone) used to be my "reward" day to have Kraft mac & cheese after cleaning the house. I can eat almost the whole box, especially with lots of salt while watching 80's movie re-runs (16 Candles, Breakfast Club, etc.)!

Oh yeah! MelissaAS: that sounds like the perfect weekend! haha http://www.cookinglight.com/bbs/biggrin.gif
I really love potato pancakes with lots of onions, salt & pepper on top. My DH doent do well with the onions, so I only make these when its a 'fend-night'. Yummy!

CHINESE FOOD! DH won't touch it, and I love it. I order a couple different dishes and park in front of the sofa with, you guessed it, chick flicks.

For the most part, you guys are just TOO healthy in your food sneaking... oatmeal? cereal? broccoli? sushi? salmon?

Macaroni and cheese seems to be the winner, admittedly, and also one of my weaknesses. If I'm alone, I'll usually eat something that I know my DH would complain is too unhealthy if he were around, like cheetos, baked french fries dipped in Heinz 57 sauce, or friend potatoes and onions smothered in ketchup, or baked potato smothered in butter. Big potato trend there as you may have noticed! Also candy, candy and more candy. Butterfinger, Mounds or Milky Way Dark.

How about...Why eat a half a bag of Cheetos when you can eat a whole bag of Pirate's Booty!

You are all so good. You seem to be eating things that your DH/SO/Fam don't like. I am just awful then....when I know I am going to be alone, I go for things I don't want to share. Shrimp cocktail, lobster, etc. with some wine...life is good.

Kid food. Why face bummed faces by cooking a big, healthy meal that only I will like bc dh is not there?

French toast, grilled cheese sandwiches, MacDonald's and finger food night on the floor in front of the tv are faves.

The bonus is that not only is it less work for me, the kids are happy happy happy.

But, I did make a whole bowl of CL's toffee dip recently, and ate it by myself over two nights (with about a dozen apples). I'd NEVER overeat like that if DH were there to see it!

Thought I'd update you all on my weekend food extravaganza since I started the thread. Friday night: Cheetos, a diet Coke, and a Toblerone candy bar. Saturday night: Brie cheese, fancy crackers, fresh plums, and an excellent glass of French wine. The chick flick of the night was "Ms Congeniality" - I liked it! Sunday night: Amy's Kitchen Veggie Pot Pie and more French wine. Monday night: Popcorn and gingersnaps dipped in Nutella. The weather has been beautiful in the NW so I also managed to spend a couple evenings on my deck sipping ice tea. Life was grand! Happy to see DH tonight though.
