This is also a favorite of mine. I often vary the veggies -- use broccoli or chopped canned artichokes instead of peas.

I made the Orzo with Chicken and Asiago last night. I got it off the website but it may be from May 1999. This is probably the easiest CL recipe I have ever made. It is a good meal for a night when you don't have time to cook something fancy. I would consider it to be comfort food. The orzo/chicken mixture becomes quite creamy, even before the cheese is added. I added a whole 10 oz box of frozen peas which was fine. I also had to increase the amount of oregano (that is the one I chose to use) and pepper. The flavor of the dish is good, but it doesn't jump out and grab you. Sprinkling half of the Asiago on top is a good idea because it helps increase the flavor. I would give it a "7" for taste but I would definitely make it again becasue it was so easy. My husband liked it too - it is the type of meal that guys and kids will like, I think.

Orzo with Chicken and Asiago

1 cup water
16 ozs fat-free chicken broth -- (16-ounce)
12 ounces boneless skinless chicken breast -- cut into bite-sized pieces
1 1/4 cups orzo -- uncooked
1 cup frozen green peas -- thawed
2 ozs Asiago cheese -- 1/2 cup, divided
1/4 teaspoon salt
1/4 teaspoon dried rosemary -- basil, or oregano
1/8 teaspoon black pepper
Combine water and broth in a Dutch oven; bring to a boil. Add chicken and pasta; bring to a boil. Reduce heat; simmer 12 minutes, stirring occasionally. Remove from heat; stir in peas, 1/4 cup cheese, salt, herbs, and pepper. Top each serving with 1 tablespoon cheese.

This was one of the first CL recipes that I made, and I liked it a lot. I haven't made it again, but that's due more to recipe overload than anything else.
