This very well may be a stupid question, but is it safe to mail baked goods in this heat? I am concerned about the egg issue. I send DH baked goods quite a bit when he is underway. They usually have a plane "drop" a couple of times to bring them fresh veggies and perishables. When they were down in the South Pacific just recently, I made him brownies twice to send down and he said he didn't get sick LOL! If they are going any distance, I would send priority and note that bar cookies generally mail better.

I've done it before and not had problems. I think since everything is cooked, the eggs shouldn't be a problem. Send it Priority, just in case :-)

I've never personally done this, but a friend's mom mails cakes that she bakes right in a shoe box. She lines a shoe box with heavy duty foil, pours in the cake batter and bakes as usual, then wraps the top with extra foil, puts on the shoe box lid, and mails it just like that! She would send each of her children a birthday cake every year, and never had a problem.
Like I said, I've never done this myself, but if anyone tries it, let us know how it works.
