View Full Version : Please please tell me what to have for dinner

Okay, I know there are thousands of recipies on this board, but I just don't know what to cook tonight. I was planning on meatloaf but I forgot to defrost the meat, that's out. And I can't grill because its against fire codes.

So does anyone have an idea for something quick, good, and not too filling (normally I would go with just pasta and sauce but its so humid--yuck!!)?

I would really appreciate any help!

The spring tortellini salad from March? 2001 is awesome and would be a refreshing, albeit pasta, dinner for you tonight.

I need some advice, too. I have some chicken thighs thawing and lots of rice in the cupboard? Any ideas?

Any of the chicken thigh recipes from May's CL were wonderful!! The buttermilk and rosemary ones would be good with a rice pilaf.

Hi Hungry!

If you've got eggs and milk or half and half, an omelette can be whipped together with whatever vegetables you have in the fridge- saute some mushrooms, peppers, dice tomatoes, add some grated cheese, some fresh or dried herbs.

Also, if you have any potatoes on hand or hash browns in the freezer, search on the CL recipe index (on the website) for Frittata recipes or try the Eggs Piperade, which is also on the recipe index, under the frittata search.

do you have any jerk seasoning you can season your chicken with? It goes really well with yellow rice. I may have that with a Frosty Cranberry Salad I made earlier.

For Hungry! how about Cheddar-Jalapeno Quesadilla Salad with Cilantro Line Vinaigrette from 6/01.

How about Balsamic Vinagrette Chicken over mixed greens? That was my dinner last night with homemade croutons. The chicken had to marinade for 1 hour, but other than that, very easy to prepare and light.

Thanks so much everyone! Well, I went to the store armed with all of your suggestions, but then I found some really thin good looking steaks and I bought those. I hardly ever make red meat, but what I did was chop up the steaks into little pieces and marinate them in a little oil, thai chili garlic puree, and some rice vinegar and water for a bout an hour. Then I made a small stir fry with it and served it over a tossed salad of field greens and chopped tomatoes. I added some fresh basil too. It turned out pretty well, if I do say so myself. But, I think tonight it will be omlette.

I always have a hard time cooking in the summer. The sad part is the only things I want are ice cream, corn on the cob, tomatoes, and lemonade. I think we need to buy a house so I can get a grill.

Well, I ended up making an old favorite, Lemon-Garlic Chicken Thighs. This is one of my husband's all-time favorites. And, I used a box of Zatarains that I had in the pantry. I have to admit, Zatarains rice dishes are my favorite convenience foods. Thanks for all the suggestions -- inlcuding the chicken and rice. http://www.cookinglight.com/bbs/smile.gif
