A chilly, rainy day prompted the need for comfort food tonight.

I made this risotto with sweet brown rice. Although a short grain, this rice called for more liquid and a longer cooking time and was not as creamy as arborio would have been, but it was so delicious- sweet, nutty, rich and a great contrast to the spicy bite of Tabasco.

However, I must say that the 2 cups of corn called for in the recipe is about 1 cup too much.

Leftovers tomorrow, yum!

I just got my April issue yesterday and this recipe was flagged for future consumption! I LOVE risotto and Monterey Jack and roasted peppers... what luck that this recipe showed up!

I made this tonight and it was great! DSO gave it a 9.5 - highest rating ever! I only used half the corn as KValley suggested. I used low fat mont jack (couldn't find it with jalepenos up here in the great white north), and gave it a couple of extra splashes of Tabasco instead.

I made this last night--I would call it good, maybe really good--but am I the only one who has the Vidalia Onion and Feta Risotto memory to beat?

I'm serving the leftover risotto tonight with the pork and pineapple kabobs from the Best of CL cookbook. I think they will go pretty well together.

Kristi,

Are you saying that this Risotto tastes like the Vidalia Onion & Feta Risotto? I had marked this recipe as one I want to try, but I didn't care for the Vidalia Onion Risotto (way too salty) so I would hate to waste the energy. Are the similarities that noticible?

Sorry-

no, the monterey jack risotto is NOTHING like the Vidalia Onion Risotto--which is my all time favorite, and this one IMO, was not as good.

but since you don't like the vidalia onion one, maybe you will like this one better?

Eks, I tried this last night and paired it with a fruit salad plus a slice of cake for dessert and found it to be filling enough. I didn't walk away from the table groaning, which is actually a good thing. http://www.cookinglight.com/bbs/smile.gif

Oh my goodness!!!!! Made this last night for dinner and thought it was outstanding. The best risotto I have ever made (and I have made the vidalia onion one). I left out the hot sauce becasue I thought the pepper jack would give it enough kick for us and it did. Wonderful recipe! http://www.cookinglight.com/bbs/biggrin.gif

Kristilyn1, I honestly don't think anything could beat the Vidalia Onion and Feta Risotto ... I haven't tried this one yet, but considering that the onion risotto made my toes tingle like they've never tingled before (oops! Sorry DH!) I'm not expecting this one to beat it. Could it match it? Better kate then never.

I made this today, and my fiancee and future FIL liked it alot, but the concensus was that it would be AWESOME if some sdausage was thrown in. I myself liked, it, but as I'm sick and have only a couple of taste buds working http://www.cookinglight.com/bbs/smile.gif , I thought it wasn't very flavorful. I'm sure, based on your reviews, and my families reaction to it, that it's actually very good.

Anyone else add any extras to this?

i made this today for lunch, it was great. I used 2 cups of corn ( i love corn) as the recipe suggested. I also added the coriander which was optional. It had just the right amount of spice with the pepper jack cheese. I think it could either be a main dish or a side to Southwestern type food..fajitas maybe? this recipe gets 8 1/2 out of 10.

I finally got to try this and just wanted to add my thumbs up!!! Hubby has been taking it to work for lunch, so I KNOW he really liked it too!!

I finally got around to making this last night, and it was SO good. I used veggie broth instead of chicken, to make it a vegetarian meal, and it was delicious. One of the best risottos I've made so far, IMO.

I finally got around to making this risotto for dinner. Yummy!! Thumbs up from the family. Thought that I would bump it up for everyone else that has been wanting to make it but just didn't find the time.
