When ever I need a quick dinner and I want something hot,I'll make a grilled sandwich.

So my question is: Do you do that, and if so what is your favorate combo?

We like grilled ham and cheese (of course), we also like grilled rubens. I'd love to hear some of your original ideas, as mine are not all that original.

Tillamook cheddar with pesto on sourdough

Smoked gouda on rye or other hearty bread

Camembert and ham on French bread

Mozzarella, pesto and proscuitto on foccacia

Add veggies and herbs as you will...I'm thinking carmelized onions, wilted spinach, roasted garlic

Man, I am so hungry!!

Grilled veggies - zucchini, onions, squash, asparagus with fresh mozz and basil.

I like grilled cheese dipped in some jelly. This one is kind of weird, have you ever tried grilling a pb&j? It's really good! Grilled portabella (which has been marinated in a wine vinegar) with tomato, swiss cheese, lettuce, avocado and purple onion on an onion bun!

Tomatoes and basil with whatever kind of cheese I have on hand.

I had a sandwich in a restaurant yesterday with turkey, sprouts, cream cheese and cranberry sauce. I know it isn't a grilled sandwich, but I'm adding it to my list of summer stand-bys. It would be a great sandwich for a hot day!

I just posted this on the "Favorite vegetarian summer meal" thread a couple hours ago... definitely worth the effort of a re-post!

Grilled Vegetable Sandwich

1/4 cup balsamic vinegar
2 T. olive oil
1 T. fresh basil (1 t. dried)
2 t. molasses
1 1/2 t. fresh thyme (1/2 t. dried)
1/4 t. salt
1/4 t. pepper
cooking spray
3 medium zucchini, cut lengthwise into 1/4" strips
1 medium yellow pepper, cut into 6 wedges
2 medium red peppers, cut into 6 wedges each
1 large onion, cut into 1/2" slices
1 (16 oz) loaf French bread
3/4 cup (3 oz) crumbled Feta cheese
2 T. fat-free mayonnaise
1/4 cup (1 oz) grated fresh Parmesan cheese

Combine first 7 ingredients in a large heavy-duty zip-top plastic bag. Add vegetables; seal bag and marinate in refrigerator 2 hours, turning bag occasionally.

Remove vegetables from bag, reserving marinade. Set vegetables aside.

Cut bread in half horizontally and brush 3 T. reserved marinade over cut sides of bread; set bread and remaining marinade aside.

Place vegetables in a wire grill basket coated with cooking spray. Prepare grill. Place basket on grill rack; grill 5 minutes, basting occasionally with marinade. Turn basket over, grill 2 minutes, basting occasionally. Place bread, cut sides down, on grill rack; grill an additional 3 minutes or until vegetables are tender and bread is toasted.

Combine Feta and mayo in a bowl; stir well. Spread mayo mixture evenly over cut sides of toasted bread; place grilled vegetables on bottom half of bread. Sprinkle Parmesan cheese over the vegetables; top with top half of bread. Cut loaf into 8 pieces.

(for some reason I think this may have used eggplant instead of zucchini- I usuallly do zucchini, but either one works just as well)

Grilled tuna melts are yummy!

I use albacore white tuna, mixed w/ low fat mayo or Hellman's, sliced green onions, S & P, ground red pepper and grated cheese (whatever I have on hand - any kind is good!)

We love 'em!

I love the CL monte cristo grilles sandwiches... so yummy. The recipe for a turkey grilled sandwich in the new July issue looks pretty good, too....

We marinate chicken for me and steak for him and cut it into strips..grill along with grilled peppers,onions and mushrooms...toast a bun, add some provolone cheese and whala..
philly cheese steak or philly cheese chicken!! YUMMY!

My God, I'm drooling so badly, I almost tripped over my tongue. It started slowly with KValley and and by the time I got to the end of the postings, I was near death by dehydration.

Has anyone grilled sandwiches on the George Forman grill? Hurry, I've got some of the stuff in my house!

One of my favorites that is weird but tasty, I promise... grilled sourdough or rye with strawberry jam and sharp cheddar. Similar to grilled cheese with chutney... yum. Especially tasty with the rye bread.

We do lots of grilled sandwiches on Saturday afternoons. When I'm not in the mood for a tuna melt, I'll usually make a 3-cheese grilled cheese with avocado and tomato slices on whole grain bread http://www.cookinglight.com/bbs/smile.gif

Otherwise, my absolute favorite (when I have time) is grilled eggplant sandwiches with smoked mozzarella cheese and sundried tomato pesto http://www.cookinglight.com/bbs/smile.gif Mmmm... Delish!

If you want a twist on a reuben sandwich, try this:

(feeds a family of 4)

1/2 - 3/4 lb lowfat swiss, diced small
1 can (~12 - 14oz) sauerkraut - like silver floss - drained. You can rinse it lightly, if you want.
1 1/2 can corned beef (Yep, a spam-sized can of the stuff, flaked)
Lowfat Thousand Island dressing (enough to moisten) You can also add 1 TBS mayo, if you feel like it.

Mix all ingredients together and let them sit for about a half hour. (Cover with plastic wrap if you are going to leave on the counter)

To assemble sandwiches, get rye bread (beefsteak rye with seeds works best for these), spread the filling on the bread, and spray very lightly with nonstick cooking spray. Cook on a hot griddle till hot through. (I find that it works best of I clap the lid from my stockpot over the sandwiches while they're heating.

Eat and enjoy!

Well, I just got back from the farmers market and here's what I have to make a grilled sandwich:

Avacado
Tomoato
Farmers Cheese
Bacon

And on my way home from work I'll stop by the bakery and get a loaf of good bread.

Does that sound like a good combo?
