Do any of you have recommendations for a good crockpot/slow cooker cookbook? I tried to search but it doesn't seem to be working.

I not sure about cook books but I am am member of a very active yahoo group called
"slowcooker". It has thousands of recipes that people post. If you are not familiar with yahoo groups and are interested let me know and I will show you how to become a member. This particular group is open to anyone. It currently has 3,338 members.

I have one I love called Healthy Crockery Cookery by Mable Hoffman. It offers an interesting variety of recipes, not just your standard stews and soups. Not all recipes are necessarily light, but everything I tried was delicious.

How vegetarian-friendly is your Mable Hoffman cookbook? I'd love to experiment with crockpot cooking but don't know where to begin. If the Hoffman book has a few veg. recipes, I'll buy it for myself!

BlueMoose, I, too, would love to find a couple more crockpot cookbooks that I can count on. One I would NOT recommend is the ubiquitous BEST EVER CROCKPOT RECIPES! YUK!
On a more positive and very different note .... I tried your recipe for the sweet potato/oat bran/apple muffins the other day, and they were GREAT! I used a bit more sweet potato and cinnamon than the recipe called for and DH and I agreed that this recipe will be used often! http://www.cookinglight.com/bbs/biggrin.gif Many thanks for sharing!!!

I second the reccommendation for Healthy Crockery Cooking. I haven't made many of the veggie dishes in it, but there are quite a few.

gertdog, I bought that book back when I ate meat so I didn't think about it much. I flipped through it briefly at lunchtime, and it is pretty heavily focused on meat recipes. However there is a section on cooking with beans and grains, and another on vegetables. The veg section is probably intended as side dishes, but most could be main dishes as well. There is also a section on desserts.
Here is a sample of meatless (or easily converted) dishes:
Spicy Eggplant with Pinenuts
Sorrento Potato and Cheese Packets
Stuffed Grape Leaves
Curried Lentils and Vegetables
Spicy Pintos on Tortillas
Eggplant and Squash Veggie Dip
There were others, including a couple of soups. These were the ones that struck me as fabulous.

SusieO-I went to the library and checked out the crockpot cookbook by Mable Hoffman even before I read your post, so I am thrilled to hear that it is a good cookbook. Just glancing through the book, I found several recipes that look yummy.

Thanks so much for the info! I'll have to find myself a copy of the book. My mom has a crockpot stuck in the back of a cabinet, and it's mine if I want it. But I've been hesitant to add yet another appliance to my kitchen if I don't have a plan for how I'll use it!

Bluemoose, I have never been able to find a good crockpot book...but I do have a tried and true easy recipe. This is my mom's invention:
Easy Crockpot Chicken
4 boneless, skinless chicken breasts
1 can Campbell's French Onion Soup
1/2 can white or red wine
1 tsp. dried tarragon
Combine all in a crockpot and set on low for all day cooking or high for 4 hours of cooking. Wait then, viola! - a flavorful and easy main dish. I usually serve it with either mashed potatoes or rice and a salad.

I'll see if I can find a copy of Healthy Crockery Cooking somewhere.
I'm telling you, there seems to be a TREMENDOUS need for a cook slow-cooker cookbook with healthy and delightful recipes (a la Cooking Light) and not one full of "add a can of cream of mushroom soup" or "2 cups of Velveeta" recipes.

BlueMoose - I don't have a book recommendation for you since I seem to collect all of my crockpot recipes off the internet. I would be happy to post some of my recipes for you though if you wanted to get started cooking!

Susann, that's so funny. I did the same thing: checked it out of the library, then had to have one of my own!
