Fresh Fruit with Tangy Dressing (Complete CL Cookbook)
Prep Time: 18 minutes
6 T water
1/3 cup sugar
1/3 cup lemon juice
1 T vegetable oil
1 teas celery seeds
1 teas dry mustard
1 teas paprika
1/2 teas salt
4 cups cubed cantaloupe
4 cups sliced bananas
1 avocado, peeled and sliced
Lettuce leaves
1. Place first 8 ingredients in a blender; process until well-blended.
2. Divide cantaloupe, banana and avocado evenly among 8 lettuce-lined salad plates. Drizzle 2 T dressing over each salad.
Yield: 8 servings
Calories 186 (25% from fat); Fat 5.2gm; Protein 2.4gm; Carb 36.8gm; Fiber 3.9gm; Chol 0mg; Iron 1mg; Sodium 160mg; Calc 29mg
NOTE: I put the cantaloupe, bananas and avocado in a bowl and tossed with the dressing. Then I served it on lettuce leaves.
