View Full Version : Outstanding Salad!! Fruit-and-Honey Spinach Salad

I made this salad from the Complete Cooking Light Cookbook tonight and it was sooooo good I had to share it with you! Besides the spinach, the main ingredients are cantaloupe, strawberries, and blackberries and the dressing is made of seedless raspberry jam, raspberry vinegar and honey. The final touch is chopped macademia nuts. Delicious! It is so colorful and the flavors are so excellent. It is the perfect salad to serve for company in the summertime. Here is the recipe for those of you that don't have the cookbook.

Fruit-and-Honey Spinach Salad

8 cups spinach leaves
2 cups cantaloupe balls
1 1/2 cups halved strawberries
1 cup fresh blackberries
1/4 cup seedless raspberry jam
1/4 cup raspberry vinegar
2 T honey
2 teas olive oil
1/4 cup chopped macademia nuts

1. Combine spinach, cantaloupe, strawberries, and blackberries in a large bowl, and toss gently.

2. Combine jam, vinegar, honey and oil in a small bowl; stir well with a whisk. Drizzle dressing over spinach mixture, and toss gently to coat. Sprinkle spinach mixture with chopped macademia nuts. Yield: 6 servngs (serving size: 2 cups).

That sounds wonderful. I'm always looking for more Things To Do With Spinach. I'll have to ditch the cantaloupe, though. Maybe think about a substitute fruit.

Strawberries-and-Feta Salad

2 tablespoons orange juice
1 tablespoon white wine vinegar
2 teaspoons extra-virgin olive oil
3/4 teaspoon sugar
6 cups gourmet salad greens
1 cup quartered strawberries
1/4 cup crumbled feta cheese -- (1 ounce)

Combine first 4 ingredients in a small bowl; stir with a whisk. Combine greens, strawberries, and cheese in a large bowl; add orange juice mixture, tossing to coat. Serve immediately. Yield: 4 servings (serving size: 1 1/2 cups).

I have to post my raving review for the fruit-honey spinach salad - I made it last weekend for guests and everyone loved it - it was so beautiful too.
Best of all, I think it was probably the easiest salad dressing I have ever made!

Peggy, thanks for posting the spinach and strawberry salad. It looks outstanding! Just today I had a client sign up today for a party in July. She requested interesting salads and this really fits the bill. Thanks so much.

Jennie,
I have a 15 yr old son who shuts down at the words fruit, vegetable, and salad-combining isn't an option! Just ask him about the time when he was 3 and I had almost "convinced" him that bananas were delicious!

Thanks for the review. I've been wanting to make this. I was afraid it would be too sweet. Now if I con only convince my 9 yr old that fruit and veggie do belong in the same salad!
