Hi everyone -- I hope you can help me with this question. I want to make a few batches of muffins this weekend, but I want to use some whole wheat and soy flours in place of some or all of the white flour in my recipes. But, I have no idea how to substitute flour -- is it one to one, so that for one cup of white I would use one cup of ww or soy? Help!

You can use wheat flour instead of white flour easily -- substitute one for one. However, be aware that if you use ALL whole wheat flour, your muffins will be far more dense than usual. You might be better off going 1/2 and 1/2.
Soy flour is another story. I've had great luck using it, but I would advise against using ALL soy flour in any recipe. Instead, use a 1:3 ratio of soy/white flour. This gives you the benefits of the soy without disrupting the flavor. Also be aware that soy flour tends to cause browning -- so watch your muffins as they bake to make sure they don't brown too quickly.

I regualarly substitute wheat flour for all of the white flour in a recipe. Actually, I don't even buy white flour anymore. The taste and texture will be quite different, as lorilei mentioned, but I like it better.
