I bought Deborah Madison's Vegetable Soups cookbook several months ago and I finally tried a recipe last night - and WOW! what a recipe! Yellow Pea and Coconut Milk Soup with Spinach, Rice, and Spiced Yogurt, which can be found here (http://www.leitesculinaria.com/recipes/cookbook/yellow_pea_soup.html), is a beautiful soup, rich, fragrant, and substantial. It is fairly time-consuming and requires several pots but the combination of the different elements - the creamy split pea base, the mound of rice, and the tangy yogurt - provides great texture and taste contrast.

I only made two minor changes. First, I added the spinach directly to the soup for a few minutes instead of wilting them in a separate skillet. Second, I strained the yogurt so that it was thicker.

Thanks so much for posting this! It sounds truly wonderful. I know technically it's not soup season with the summer almost here, but this sounds worthy of making an exception.

Are all the soups in the cookbook that good? May need to look into buying it...

Gaja, thanks so much for posting this. DH and I got some bad news today (wanted to retire early, but the health insurance didn't work out), so this recipe will be the one bright spot in our day today!

thanks for posting!! DF hates soup, but he's going to be out of town till Saturday, and i don't have other plans for cooking, so i think i'll try this out!! it sounds wonderful :)
