View Full Version : Oh dear...I need help with no-bake cookies!

Yikes!! You would think I could do this, right? But everytime I make these, they don't set up without refrigerating them for a few hours. Any ideas or other no-bake recipes that I could try? Here's the recipe I use....I know it isn't very light http://www.cookinglight.com/bbs/frown.gif

2 c sugar
1/2 c milk
1 stick butter
3 tbsp cocoa
1 tsp salt
3 c instant oatmeal
1 tsp vanilla
1 c coconut

Combine sugar through salt in saucepan. Bring to a boil. Remove from heat and add remaining ingredients. Drop on to waxed paper.

Here is a recipe that my mom sent me yesterday. She wasn't actually trying to send me this recipe, she just wanted to show me a great new (or new to me) food website. it is www.fabulousfoods.com. (http://www.fabulousfoods.com.) There is a section on that website for lowfat recipes that is pretty extensive. Anyway, this recipe came from the non-lowfat section of that site.

Baby Ruth Bars

These easy to make, no-bake cookies taste remarkably like the popular candy bar

1 C peanut butter
1 C white corn syrup
1/2 C brown sugar, packed
1/2 C sugar
6 C cornflakes, crushed
1 C chocolate chips
3/4 C peanuts

Butter a 9" X 13" baking pan. Heat sugars, syrup, and peanut butter in a heavy saucepan. Mix until smooth. Combine cornflakes, chocolate chips, and peanuts. Pour peanut butter mixture over the cornflake mixture and mix well. Press into the bottom of the prepared pan. Allow to cool before cutting into bars.

Makes about 18 Bars

SusanL is right--the recipes I've seen usually call for quick cooking oatmeal. Another idea is to add a couple of ounces of chocolate chips and a couple of handfuls of mini marshmallows.

Here's the recipe I've used for years. Maybe it's the length of time you have to boil this one. They start to harden before I even get all of them dropped out on the waxed paper and have never needed refrigeration. I just compared the reciped....they're VERY close with exception of one major difference. This recipe uses peanut butter...yours uses coconut. Maybe the 'boiling for 2 minutes' is all you need to do differently though.

Chocolate Oatmeal Cookies

1 stick butter (or margarine)
2 cups sugar
3 Tbsp. cocoa
½ cup milk
½ cup peanut butter
2 ½ cups quick oatmeal
1 tsp. Vanilla

Melt butter and add sugar, cocoa and milk. Boil for exactly 2 minutes.

Quickly add the peanut butter, oatmeal and vanilla.

Drop by spoonful on waxed paper. Cool and enjoy.

Here's the one I've used before. These are addictive! I might have to make these to take to the lake this weekend. http://www.cookinglight.com/bbs/biggrin.gif To echo the others above, I'd say your problem is definitely not letting them boil long enough. Also, if you are using instant oatmeal instead of quick oats, I would think that would also be a problem.

Fudge No Bake Cookies

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 1/2 cups sugar
1/3 cup cocoa
1/2 cup milk
1 stick butter or margarine -- (1/2 cup)
1 teaspoon vanilla extract
2 1/2 cups quick cooking oats -- (2 1/2 to 3)
1/2 cup peanut butter

Mix sugar, cocoa, milk and butter in a large saucepan.

Bring to a boil over medium heat while stirring. Boil for 1 to 1 1/2 minutes (don't start timing until it comes to a full boil).

Remove from heat and add oatmeal, vanilla, and peanut butter.

Drop by tablespoonfuls onto wax paper (I use a cookie scoop). Let set until hardened.

Can store at room temp. or in the fridge.

Now I have a craving for these things and they are addicting.

OK - my version (maybe this is the Indiana version):
one stick butter

I have had these not set a couple of times, but that is really really a rare thing. Maybe it was too humid or something.

Thank you all for your replies. I was wondering about the humidity...I know that will affect things like divinity. Maybe it's the boiling issue...I will try two minutes the next time. In either case, I'm going to try these again soon. And thanks for all of these new recipes...I'm sure my waistline will be happy about that! http://www.cookinglight.com/bbs/smile.gif

And Val, I did check out the website -- very wonderful. I need to bookmark it and spend more time playing around. Looks like there could be some great things there.
