View Full Version : looking for a Southern Living recipe

I know this is the Cooking Light board but some or most of you probably are like me and have dozens of other cook books as well. I am looking for a Southern Living recipe that came out some time between 1990 and 1995, I think, for a white chocolate cake. It was on the cover and was decorated with violets. I did not find it on their website so I am appealing to any of you that may have books that go back that far. I only started with 1999.

Do you remember anything else about the cake? Except for the violets, what else was different about the cake? Any filling? Could you improvise with various recipes? Just trying to help if you can narrow it down.

Hi, just wanted to let you know that I am waiting for a reply to an e-mail I sent Kay. I think I found the cake she is looking for. I didn't want to type the whole thing if it was the wrong one, but I think it is the one. Has white chocolate, with white chocolate cream cheese frosting with crystallized violas and a beautiful picture of the cake. SL March 1994

I am sorry it is so long to type in but I would very much appreciate it. it is a wonderful cake.

CAMEO CAKE

1 1/2 cups butter
3/4 cup water
1 (4 oz.) bar white chocolate, broken into pieces*
1 1/2 cups buttermilk
4 large eggs lightly beaten
1 1/2 tsp vanilla extract
3 1/2 cups all purpose flour, divided
1 cup chopped pecans, toasted
2 1/4 cups sugar
1 1/2 tsp. baking soda
White Chocolate-Cream Cheese Frosting
Garnishes: crystallized violas with leaves, shaved white chocolate, or toasted chopped pecans

Combine butter and water in a medium saucepan; bring to a boil over medium heat, stirring occasionally. Remove from heat. Add white chocolate, stirring until chocolate melts. Stir in buttermilk, eggs, and vanilla; set aside.

Combine 1/2 cup flour and pecans, stirring to coat; set aside.

Combine remaining 3 cups flour, sugar, and soda in a large mixing bowl; gradually stir in white chocolate mixture. Fold in pecan mixture. (Batter will be thin.) Pour into 3 greased and floured 9" round cakepans.

Bake at 350 for 20 to 25 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 10 minutes; remove from pans, and let cool completely on wire racks.

Spread White Chocolate-Cream Cheese Frosting between layers and on top and sides of cake. Store in refrigerator. Garnish, if desired. Yield; 0ne 3-layer cake.

WHITE CHOCOLATE-CREAM CHEESE FROSTING

1 (4 oz.) bar white chocolate*
1 (8 oz.) package cream cheese, softened
1 (3 oz.) package cream cheese, softened
1/3 cup butter, softened
6 1/2 cups sifted powdered sugar
1 1/2 tsp. vanilla extract

Melt white chocolate in a heavy saucepan over low heat, stirring constantly. Remove from heat; cool 10 minutes, stirring occasionally.

Beat cream cheese and butter at medium speed with an electric mixer until creamy. Gradually add white chocolate, beating constantly until blended. Gradually add powdered sugar, beating until smooth. Stir in vanilla. Yield: about 5 cups.
Southern Living says,*For white chocolate, we used Ghirardelli.
