View Full Version : Sauer Kraut-what the heck do I do w/ it?

Hi all~
OK so I bought a can of sauer kraut but I have not a clue as how to use it! Does anyone know what to do with it? Being a veggie girl I won't use meat with it but anything else would be grand. Thanks!

Bavarian Sausage and Kraut Supper from December 1999... Instead of the chicken sausage you could substitute some veggie-sausage (like Morningstar Farms, maybe? You probably have a better idea of what's out there then I do). Also veggie broth rather than the chicken broth.


4 cups uncooked medium egg noodles
1 tablespoon olive oil
1 cup sliced onion
1 teaspoon caraway seed
3/4 pound Granny Smith apple, peeled and sliced
1 1/2 cups refrigerated sauerkraut, drained
12 ounces chicken apple sausage, sliced 1/2" thick
1/2 cup fat-free chicken broth
1/4 cup sherry

Cook noodles accoring to package directions, omitting salt and fat; drain and set the noodles aside.

while the noodles are cooking, heat the olive oil in a large nonstick skillet over medium-high heat. Add sliced onion and caraway seeds, and cook 4 minutes or until lightly browned, stirring constantly. Add apple, sauerkraut, and sausage, and cook 5 minutes. Stir in the chicken broth and sherry, and bring to a boil. Reduce heat to medium, and cook 5 minutes. Serve over the noodles. Serves 4.

You could simmer it in a skillet with chopped tart apples, chunked up red potatoes, chopped onion, and a teaspoon or so of caraway seed. That's how we always did sauerkraut, except we also had kielbasa with it. I bet Morningstar link sausage might also be tasty cut up in it, if you like their stuff.

What else? Eat it out of the jar! Seriously, one of my favorite meals of all time was in a Bier Garten in Munich -- a giant Bavarian pretzel with a bowl of sauerkraut http://www.cookinglight.com/bbs/biggrin.gif

It would also be delish as an open-faced sandwich, pumpernickel with thinly sliced apples, then the sauerkraut and Swiss cheese, melted under the broiler. Yum.

I cook it with pork chops (the non-meat options mentioned above would work too, I think) and eat it with homemade mashed potatoes. Very Pennsylvania Dutch and very yummy! BTW, if you like it and decide to buy some more, I think that the kind that comes in plastic bags in the refrigerated section at the grocery store is the best.

But there are plenty of options out there.
Do you eat fish (I have a pretty good recipe for orange roughy and kraut)? Eggs?

Here's a lovely quiche recipe using sauerkraut:

Kraut Quiche

1 deep dish pie shell baked
½ cup onion
1 cup drained sauerkraut
¼ tsp. Garlic powder (I use 1-2 cloves fresh)
½ tsp. basil (1 or so tsp fresh)
½ tsp. Ground cinnamon
½ tsp. Tarragon
½ tbs. Parsley (1-2 tsp fresh)
1 cup Swiss cheese shredded
10 oz. evaporated milk
2 eggs

Place onion into the pie shell and top with sauerkraut.

Combine the eggs, milk, and spices beat well. Pour over pie shell. Top with cheese.

Bake in a 350-degree oven for 45 minutes, until golden brown and a knife inserted in the center comes out clean.

Serve warm or at room temperature.

Quite honestly, however, you might want to try this recipe http://www.cookinglight.com/bbs/smile.gif I know it sounds bizarre, but it's truly moist and wonderful! It's been my grandmother's staple for years.

Chocolate Sauerkraut Cake

¾ cup sauerkraut drained and chopped
1 ½ cups sugar
½ cup butter
3 eggs
1 tsp. pure vanilla
2 cups all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
1 cup water
½ cup unsweetened cocoa powder

Preheat oven to 350 degrees
Sift all dry ingredients together. Cream sugar, butter and vanilla. Beat eggs in one at a time.

Add dry ingredients to creamed mixture alternately with water. Add sauerkraut and mix thoroughly.

Pour into greased pan. Bake 30 to 40 minutes until cake tests done.

Frost with your choice of frostings... my favorite is cream cheese frosting, but chocolate fudge is good too!

For me, sauerkraut is one of those things that I hafta have every now and then.

Takes me back a while, when I was a kid and we'd have potluck suppers at church, someone would always bring this dish in a crockpot - spiral noodles, mushrooms and sauerkraut. I'm sure there was more in it, but that was such a comfort food for me......

I hate the canned stuff, but I have been known to eat a quart jar of my grandparents homemade kraut in under a week-my feet were so swollen from the sodium, but it was worth it. Anyway, straight from the jar is good, but it is also really really good on top of pinto beans with chopped onions or with mashed potatoes. Yum.
