View Full Version : Quiche/tart pan and no recipes - HELP

I just received this Emile Henry Quiche/Tart pan as a gift and have been searching for recipes. All the ones I have found are asking for a 9-inch pie crust. Can I still use the 9-inch tart/quiche pan? And how can i lighten some of the recipes? Any ideas?

Try this recipe (I think a 9 inch pan will work just as well):
Cherry Clafouti
1 tablespoon unsalted butter (used cooking spray)
1 1/2 pounds cherries, pitted
3 tablespoons all-purpose flour
1 pinch of salt
1/4 cup granulated sugar
4 large eggs (used egg beaters for this)
2 large egg yolks 1 whole egg
1 cup milk (used non-fat)
1 cup heavy cream (used non-fat evaporated milk)
1 vanilla bean, split and scraped
3 tablespoons kirsch (used Brandy)
Confectioners' sugar, for dusting (omitted)
1. Heat oven to 375°. Butter a 10-inch porcelain tart dish, and fill with cherries. Set aside.
2. Sift the flour and salt together in a large bowl. Add the sugar. Gradually whisk in the whole eggs, egg yolks, milk, and cream. Add vanilla-bean scrapings and kirsch; whisk to combine.
3. Using a sieve, strain the batter over the cherries. Bake until puffed and browned, about 45 minutes. Let cool until warm; it will sink slightly. Dust with confectioners' sugar, and serve.

When you go to the site click on "Internet Cookbook", and then under "egg dishes" click on Quiche..

I'm in the market for a new tart/quiche pan...does this one have a removeable bottom?

I've made the Apple Tart recipe in the French cooking feature in CL a couple of months ago in my 9" tart pan. The recipe calls for a 10" but mine is 9" . It works fine - the tart is just a little taller than the illustration.
It's delicious and easy - give it a try.

I've checked the site and couldn't locate the site you mentioned re: the recipe book. Could you please post the link to the book?
