I have a 4.5 oz jar of dried beef in my pantry that I don't know what to do with. I had bought it make some recipe for my boyfriend that was a childhood fav. However, he's no longer in the picture and the recipe does not appeal to me.
So help me use this stuff!

Here's an oldie (probably from '70s) but tasty:
Chipped Beef Rolls
Beat together until smooth:
1 8-oz pkg cream cheese
1/2 tsp garlic powder
3/4 Tbsp. milk
Spread over 2 slices chipped beef. Roll up and cut into one-inch pieces. Place toothpick into each. Refrigerate until serving.
Yield: 5 doz.
I also have a recipe for a hot chipped beef dip with similar ingredients and pecans on top. Let me know if you'd like me to post it.

I love it in a cheese sauce over a baked potato. Make a medium white sauce (3 T. butter, 3 T. flour mix and cook a bit add 1 and a half cups milk. Cook til thickened.) Add about a pound of Velveeta. Stir til melted. Add cut up chipped beef. (I may have exagerated on the cheese. I just go til it pretty yellow.) Not what I consider a light meal but comfort food. Good with Applesauce.

One of my favorites is an oldie, revised a little. Line a 9x13 (sprayed with Pam) with two layers (or the whole jar, depending on how much you like) of dried beef. The low fat is just as good as the regular. Mix a cran of cream of mushroom soup and a cup of sour cream, you can use low fat or fat free sour cream and the low fat cream of mushroom soup, it's still just as good. If you want a lot of sauce, mix two of each. Put boneless chicken breast over the dried beef and and then pour the soup mixture over the chicken. You can make this the night before and refrigerate until ready to cook. Cook at 300 degrees for 2 hours. Serve over rice.
It's one of my husband's favorite low fat dishes. Every time I fix it he says he feels guilty eating it because it's so rich. I like to serve this to dinner guests because it's so easy.

Regarding the casserole, is the bottom layer of beef cut up or left whole? It sounds like something my husband would like.
