Betsy, we had this last night and it's a keeper. I skipped the onion...forgot... but the apricots were yummy. Very easy to put together.

Thanks, that puts my mind at ease. I meant to ask in first post,is the 4 minutes each side cited for the pork enough? (I am so accustomed to using a meat thermometer to test doneness.) Appreciate the help, Betsy

i made this and substituted peaches for the apricots. We enjoyed this recipe.
i also tried the thai-style pork sate with peanut sauce. our family liked this one even better than the first. YUMMY~~~. the meat was even great without the spicy peanut sauce. you may want to use less peppers if you don't like things hot. i used some dried, red peppers from the store. i'm not sure what kind they were.
