How long can you store defrosted phyllo?

I made the mini-spanakopitas yesterday for guests and they were wonderful!! I mistakenly defrosted 2 packages of phyllo and was wondering how long you can keep an UNOPENED package in the fridge? We're having a surprise b-day party in 4 weeks, will it still be O.K.? The box says it will keep 2 weeks, but I was sure I read somewhere that it will last up to 2 months defrosted, or was I dreaming?

According to the kitchen book that I have, defrosted will keep up to 3 weeks in the fridge but that is for an unopened box. One that has been opened it says to wrap in several layers of plastic and store for 1 week and expect a loss of pliability.

erin, I know you can safely refreeze phyllo (I think it even says it on the box somewhere). But I do it with mine, and have had no problem. Glad the spanakopitas worked out well for you. I loved them too!
