Our local farmers market has fresh patty pan squash right now. How do you make it? It looks wonderful, as most fresh vegetables do, but I have never cooked any. I searched the BB but did not find any recipes. Thanks for any help.

How about sauteed in olive oil and a little bit (or a lot)of garlic?

Baked Stuff Pattypan Squash
First Magazine (1992)
serves 4

4 pattypan squash
1 onion
sausage
3/4 pound chopped parsley
1-1/2 cups fresh bread crumbs
1/2 teaspoon pepper
1 tablespoon olive oil

Preheat oven to 350°F.
Cut squash in half, horizontally and scoop out the seeds.
Chop onion.
Crumble sausage and cook until no longer pink.
Remove from the pan with a slotted spoon and set aside.
Add onion to fat in pan and cook till soft, 2 minutes.
Combine sausage, onion, parsley, bread crumbs, pepper and 2 tablespoons water.
Divide mixture among squash halves.
Brush tops of the stuffing and squash with oil.
Pour 1/2" water in a large baking pan.
Put squash in pan, cover and bake 30 minutes.
Uncover and bake until squash are tender and stuffing is browned, about 15 minutes.

Late Summer Pizza
From Medford Mail Tribune

1 leek
olive oil
rosemary
1 recipe pizza crust
1/2 small pattypan squash
1/4 teaspoons Italian herbs
1/2 small sunburst squash
olive oil
3 ounces dry Monterey Jack cheese
1/2 oz Parmesan Cheese, grated
1/2 small zucchini

Clean and thinly slice.
Sauté in olive oil and rosemary.
Follow package directions to prepare pizza crust, adding the Italian herbs to the dough as you form it onto a 10-11" round.
Bake on parchment-lined baking sheet or on a pizza stone at 425°F on the lowest oven rack for 10 minutes.
Slice squashed very thin and slice cheese, using a cheese plane.
Top pizza crust with leeks, sliced jack cheese and squashes.
Return to oven and bake another 5-7 minutes, until cheese has melted.
Sprinkle with Parmesan and bake a few more minutes.

I've had great success with grilling yellow squash which is closely related to pattypan. How about splitting them lengthwise and throwing them on the grill?

Ha, You came to the right place! One of my sons is always growing them, and this year the crop is awsome! He is giving it away!
(6 plants produce daily).
Cut the patty pan squash into small pieces.
I cook mine in the pressure cooker for 3 to 4 minutes. (can also be done in the micro in a conventional saucepan. Remove from pot, place in bowl, mash with a potato masher or fork, it can stay a little lumpy, (you can use the tool for making pie dough as well). Add a little salt, pepper and butter and mix well.

You know, I haven't seen pattypan since we left California. We used to grill them whole, brushed lightly with olive oil and sprinkle with herbs and pepper. We also sliced them into wedges and sauteed them, usually with some onion and herbs, possibly other veggies.
