I have a question regarding the salting of eggplant. If a recipe calls for salting the sliced eggplant, do you salt both sides? When you rinse the eggplant, how thoroughly do you need to rinse.

I salt both sides of the slices. Let sit for 20-30 minutes. This will pull out the moisture in the eggplant. Rinse under running water and pat dry with a paper towel.
