2 tablespoons reduced-calorie stick margarine -- divided
1 cup vertically sliced onion
2 teaspoons bottled minced garlic
1/4 cup all-purpose flour
2 1/2 cups skim milk
1 1/4 cups (5 ounces) preshredded Parmesan cheese -- divided
1 1/2 teaspoons dried Italian seasoning
1/2 teaspoon pepper
1 (14.5-ounce) cam diced tomatoes with basil, garlic and
oregano
1 (10-ounce) package frozen chopped spinach -- thawed and drained
Cooking spray
1/4 cup dry breadcrumbs
2 tablespoons preshredded Parmesan cheese (1/2 ounce)
Parsley sprigs (optional)

You are a life saver (or should I say dinner saver!) Val. Can't thankyou enough. I think my paper got swept up by my daughter when she flew out of here this morning! Can't get too mad at her- she is the midst of final high school exams!!

vertically sliced onion?
what happens if you try to make this with horizontally sliced onions?
Looks good, thanks for posting Val, I think I may have to try this...must remember to slice vertically though apparently!

I cut the onion horizontally and vertically (I think http://www.cookinglight.com/bbs/wink.gif) and we are just about to sit down and eat. I'll let you know how the little darlings held up!

Oh Maureen please post back and let us know that you're OK and that you survived the HORIZONTALLY SLICED ONIONS!! The recipe just doesn't say what horrible fate will befall you if you don't slice vertically!

Well dinner went very well- until we were hit by a bolt of lightning- no doubt sent by the Cooking Gods. Let this be a lesson to you all- never slice onions horizontally when they should be VERTICAL!!!

P.S. The recipe is great!! http://www.cookinglight.com/bbs/smile.gif

This is a terrific recipe. I wanted to bump it up. I've added mushrooms and ham with great success.
