I went over to my moms house yesterday to say hi and she gave me three mangos. I know in the July issue there is a mango recipe. But I was thinking doing something different with them. Does anyone have any ideas, thnks matt

Hi Matt,
You can do many things with it, and anyway you choose would be awesome. You can make a fruit smoothie, cube it up and add to a spinach or fresh fruit salad, eat it alone, put it on top of yogurt or cold cereal. By far my favorite thing to do with mangos is make peach-mango salsa -- it's so excellent on grilled fish (well, okay, so I usually just eat it straight out of the bowl http://www.cookinglight.com/bbs/biggrin.gif ). I've also made a black bean-mango salad with spinach from one of Mollie Katzen's books that's really yummy.

These ideas sound great but I have to say that my favorite thing to do with mango is just eat it plain! Let it get nice and ripe and then peel and slice away. Then stand over the sink to get all of the yummy fruit off the seed (it drips!). Enjoy.

This is really good. The mango needs to be sweet ripe. It's okay if it's not but it's just so much better if it is. I add more spinach and slice chunks of onion in it.
Lamb with Spinach and Mango
3 Tbs soy sauce
1/4 tsp five spice powder
1 1" piece ginger, minced
2 garlic cloves, minced
1 1/2 lb lamb, cut into strips
1 Tbs sesame oil
1 fresh hot red chile, seeded and minced
8 green onions, sliced
1 ripe mango, peeled and cut into 1/2" pieces
6 oz fresh spinach
3 Tbs rice wine
1 tsp cornstarch + 1 Tbs water
Combine soy sauce, five spice powder, ginger and garlic. Add lamb and toss to coat. Marinate at least 1 hour or overnight. Heat wok and add sesame oil. Drain lamb, reserve marinade. Stir fry lamb 2-3 minutes. Add chile, green onions and mango, stir fry 1 minute. Stir in spinach, rice wine and reserved marinade. Add cornstarch mixture. Stir until spinach wilts. Serve over noodles.

Try using it as a sauce for roasted pork tenderloin. Puree the mago in your food processor, throw into a sauce pan and heat with basic seasoning and a little sherry. Garnish the plate with some fresh mango slices, I love to serve it with asparagus and risotto too.
It plates up beautifully.
