Hi Everyone,
I just wanted to share what I had for lunch. I adapted it from two fattoush recipes that I had. I just had a bunch of stuff in the fridge so the measurements may be off!
1 green pepper, chopped
2 cucumbers, chopped
2 tomatoes, chopped
1/2 onion, chopped
can of chickpeas
pita bread (chopped and cooked for 15 minutes in 375 degree oven)
mint
parsley
salt and pepper
juice of one lemon
2 garlic cloves
1 TBS olive oil
Combine the veggies, drained and rinsed chickpeas, mint and parsley. Combine the lemon juice, olive oil and garlic, season with salt and pepper and pour over the salad. Sprinkle pita chips over salad and enjoy.
