I want to try these cookies, but how is the best way to chop the crystallized ginger?
Hope this recipe is hot enough for us. I usually make ginger snaps with three 1 tsp.
ground ginger!

Curleytop, you may try a search regarding these cookies. I saw so many good reviews that I just HAD to make them, and we were disappointed because they didn't seem to have much ginger flavor! Found out it was because I'd bought an inferior (aka: cheap!) crytalized ginger in bulk. I'd never used the stuff before, so I didn't know what it was supposed to taste like, but DH tried a hunk of it and said he could barely taste the ginger. Everyone else really loved the cookies, so I'm going to try them again with GOOD ginger!
Chopping the stuff was a pain in the patoot. I sprayed my Chef Knife with cooking spray first, but it didn't do much good. The only way I could get the chunks to stay apart after I'd cut them was to toss them with about a TBS of flour. I actually had a bowl with a blob of chopped ginger in my lap in front of the TV separating it by hand and working the flour into each crevice. Wouldn't have been so bad if the cookies had turned out!! http://www.cookinglight.com/bbs/mad.gif Kitchen shears didn't work well for me, but maybe someone else had luck with them.
I'm sure the recipe is wonderful considering everyone else loved them. We loved the texture, just didn't taste much ginger. DH said next time he would like me to double the ground ginger anyway, since 1 tsp just didn't give it enough kick! Good luck!

I used TJ's crystallized ginger, and they were plenty hot for me, but you could add more if you wanted to. To chop the ginger, use a tsp. or so of granulated sugar sprinkled on top to keep it from sticking to your knife (but it will somewhat anyway - just scrape it off and keep chopping!). Good luck, and enjoy these. I liked them a lot.

I bought the bulk ginger at Whole Foods--it was not cheap but it was good.
I actually chopped it in my mini chopper. I was afraid it would just turn into a big lump but it did not. Worked very well and took only a few seconds.

Thanks, My ginger is from Trader Joe's. It is one of our "snack treats" (instead of chocolate).
I'll try the minichopper first. If it makes too much of a blob, I'll be "forced" to eat it!

These are OK, but a disappointment after Leonard's Ginger Snaps! I added a quarter cup of molasses to the recipe, too. Has anyone made them adding the cinamon and cloves as in Leonards recipe? That'll be my next try. Has anyone made the CL ginger snaps recipe that come with the download of CookWare. I love Leonards recipe but am looking for a lower fat version!
