View Full Version : I HAVE to share my celebration dinner with you!!!

Last night, we finally accepted an offer on our house (after 2 days of "playing the game") and we celebrated! We started with shrimp and goat cheese stuffed in am enormous portobello. Then we had blue crabs (maybe we are new here, but 7.00 is a lot to spend on one handful....that was out of TWO crabs!), and ahi tuna that wad been marinated in spanish olive oil with garlic and rosemary stuffed in little cuts. The ahi was fabulous....so full of flavor! It was worth every penny! We ended our seafood fest with crem brulee http://www.cookinglight.com/bbs/smile.gif

Kim, congratulations!! Don't you hate the game?
Your dinner sounds like a celebratory dinner I would truly enjoy, being a seafood lover!!
Could you explain your ahi tuna recipe, sounds wonderful!!

Susan,

I took the tuna and cut small pockets in it. I put slivers of fresh garlic in the cuts. Then I just stuck small "stalks" of rosemary down in the tuna and out the whole thing in olive oil in the fridge. I grilled it to about medium (the fish guy said to eat it just seared and if you are going to "cook it through", you might as well buy the cheeper albacore kind), Im not cosmopolitan enough yet to eat raw fish! It was still slightly pink in the very middle. As soon as I put it on the grill an amazing scent rose into the air. It was INCREDIBLE!!! I highly recommend anyone who thinks they dont like fish to try this!

Thanks...the stress will be behind us when the offer WE put out on a place is accepted...they want a July 20 closing, so we are in a time crunch......

How exiting Kim!! What part of Houston will you be moving to?? Congrats on the sale and Good Luck with your offer being accepted!!

Currently we are downtown/Montrose and we may be moving to the Galleria area.

Kim, Thanks for the recipe it sounds great!! I will have to try it. I do the rosemary and garlic with baked potatoes, especially long sprigs of rosemary, will have to try the tuna, thanks again!!

Congrats on your sale Kim (and on your dinner - that sounds awesome!) I hope your offer on the other house goes through - I know this is the really nerve-wracking time. I'll keep my fingers crossed for you guys!
