In case all of you were looking for more veggie ideas for summer... here's an idea for anyone who appreciates a crispy texture and a bit of citrus.

Try marinating fresh asparagus in a mixture of lemon juice and olive oil (you can throw in a bit of thyme for variation). Then grill the asparagus on a grill -- or place under the broiler in your oven for 10-15 minutes. You'll get a subtle smokey flavor which brings out the sweetness of the asparagus - and you'll be pleasantly surprised by the unique crisp-cooked texture!!

This is one of my husband's favorite veggies in the summer -- previous to having this dish he HATED asparagus. Now he begs me to make it at least once every couple of weeks!

Both of these tips sound absolutely wonderful, but how long do you suggest you marinade the asparagus? Maybe a dumb question but (I can't believe I have to admit this) I have never marinated anything but meat.

Also a great marinade is soy sauce with a dash of dark sesame oil, you can even add sesame seeks when grilling.

SandyDee - You really don't need long. I usually put mine in a ziplock bag or bowl and let it sit while I prepare another "aspect" of dinner... maybe 1/2 hour? Veggies don't absorb the marinade like meat, so the idea is really just to add some flavor to the outer part.

I also marinate with balsamic vinegar,a little olive oil and fresh pepper. Toss into a ziploc bag and then grill.

Has anyone tried the grilled asparagus recipe from April 2000? I tried this while grilling a pork loin this past spring and loved it (so did my girlfriend)!
The marinade includes Balsamic Vinegar, lemon juice, olive oil, low-sodium soy sauce and black pepper. The recipe says to marinade for 30 minutes, but I think you can go a bit longer.

My Husband and I love grilling veggies on the BBQ, in addition to asparagus, we found that tossing brocoli with olive oil, balsamic, S&P, and then grilling is great (I actually prefer the brocoli to the asparagus). Wedo the same wiht portobellos too. yummy!

Cook Boy-- My husband and I tried that grilled asparagus recipe. Good, but be sure to not marinade too long, especially if you have some pencil-thin spears along with thicker ones.
