This was a recipe from CL June '00... I made this last night and really loved it! Served it with BBQ chicken and Afghan bread. I loved the dressing and plan to use it on other types of salads. This dish would be perfect to bring to a BBQ in place of the traditional coleslaw type stuff. Very light and refreshing taste.

Glad to hear someone liked it. I made this for my CL dinner club and it wasn't a hit. It was easy to make, but all of us felt there wasn't much flavor and there was no color to the salad (white couscous and the pale color of the cucumber.

Did you put in the red bell pepper and green onions?

Yes, I did put in the red bell pepper and green onion and if I remember correctly I had the proper amounts all the ingredients. Still the color wasn't there--for whatever reason the color was bland and that gave me a negative impression before I even tasted it. I never realized what color can do to a dish, though I am more color conscious maybe because I'm an Interior Designer.

I was surprised to find a review on this salad. It's a recipe from June 2000. I enjoyed this salad. I did make a couple of minor adjustments to it though. As I was all out of green onion I used 1/4 cup of minced red onion instead. A sprinkle of cayenne pepper kicked it up a bit too. This was a quick and easy recipe. My version was a bit more colorful because I used long english cucumbers that i did not peel so the green color contrasted with the red bell pepper.
