Hmmm...never heard of those. The closest that I am familiar with is Navajo tacos. Did your friend describe what these "Navajo rolls" are like?

Navajo tacos are basically Indian fry bread, with taco fillings on top. Do you think your friend is talking about fry bread? It's a big greasy doughy concoction --not very light but it does hit the spot. Sort of like a heavy sopapilla.

I went on a hunt for Navajo Rolls only to find numerous recipes for Navajo Flatbread. Looking at the recipes I'm thinking that baking could be a possibility after shaping. Especially those recipes that have baking powder, baking soda, yeast or self-rising flour as an ingredient, sort of like baking powder biscuits. A friend of mine was recently in Las Vegas and had "navajo rolls" for the first time. I have never heard of them before, but he says that it was the best meal he's ever had.
Does anyone have a good recipe for Navajo rolls?

I asked my friend to send me a description of these mysterious Navajo rolls, and this is what he said:
The navajo rolls, which i had in Las Vegas so I assume they are something TEX-MEX or a southern dish, were monterey jack cheese,
crab meat and veggies put onto an unleavened flat bread and rolled and baked. Then they were cut into medallions and 4 of these medallions were served topped with deep fried spinach, chopped red cabbage and chopped tomatoes. Served with a mayo based sauce.
Anyone have any thoughts? I'm going to check out the link to flatbread--thanks Charlie!

Well, I'd say (since no one else has) to make one of the flat breads & roll it around the ingredients he's talking about. I've has fried spinach, but have no idea how to make it. Maybe make everything with taco seasonings since people have heard of Navajo Tacos - it's probably the same idea, just rolled. Other than that - sorry I can't really help. I've never heard of them either. I also bet that he could probably give you a better description of the sauce or flavorings & what veggies are included.
