View Full Version : HELP! Please! Figs & Arugula-Need today!

Someone please help me. Last year about this time I got addicted to Fig & Arugula salad with Balsamic Vinegar, Parm Cheese, etc. Figs are out and I have bought some Figs and Arugula but I can't find the darn recipe. I thought it was CL or Bon App. but can't find. Does anyone have it? I tried searching here and came up with zip. Emilycat? Lindrusso? Mamasue? Anybody. Please, please help. I want to make it tonight

Fig and Argula Salad with Parmesan

2 tablespoons minced shallots
1 1/2 tablespoons balsamic vinegar
1 tablespoon extra-virgin olive oil
1/4 teaspoon salt
16 fresh figs, each cut in half lengthwise
6 cups trimmed arugula (about 6 ounces)
1/4 teaspoon freshly ground black pepper
1/4 cup (1 ounce) shaved fresh Parmesan cheese

Combine first 4 ingredients in a large bowl, stir well with a whisk. Add figs; cover and let stand 2o minutes. Add arugula and pepper; toss well. Top with cheese. Serve immediately. Yield: 4 servings (serving size: 1 1/2 cups)

Oh Mamasue, Thank you, thank you, thank you! Where is the recipe? Is it a Cooking Light recipe? I don't know why I couldn't find it.

Emily: Dekalb FM has Figs for $2.50 for a nice-sized basket and a bag of baby arugula for $2.39. $5.00 is not bad for such a yummy salad and that will serve 4 people.

I found it in my Cooking Light 2001, page 237 or you can find in August 2000. This does sound delish....I love figs. Have you ever made this with dried figs?

Got my ingredients today! I'm making it with the Portuguese Scallops that Karen posted and grilled asparagus.
Mamasue, if you can find them, please, please make it with fresh figs -- the salad would lose all its incredible character with the dried kind. I don't think it would do the dish justice at all.

Oh, I just have to say that this is the most fantastic salad ever. I'll definitely picking up figs and arugula to make it this week -- thanks for the reminder, Yvonne!
I just wish figs weren't so darned expensive!

I just made this last night for the first time - WOW it was incredible! Luckily I have extra ingredients on hand so I can make it again tonight!

I made it Saturday night and the crowd went wild. I knew they would. I agree with Emily that I would not make it with dried figs. I also made the Sea Bass with warm tomatoe viniagrette from April or May and it was spectacular as well. By the way, a Pinot Noir goes great with the Fig & Arugula salad. I even used Fig Balsamic Vinegar that a friend gave me as a gift.n Thanks again, Mamasue.
