July--Wonderful Tapioca!

For those that aren't impressed with July- try this one! I made the coconut tapioca custard with apricots. I cut the recipe in half and it still made a lot. I think it's a terrific summer dessert. I also took this over to a friend's house on Sunday and they loved it too. It goes together very quickly and is so rich and creamy. Yum! I can't wait for lunch!
I also told my CL Supper group that I was going to bring this one to next month's dinner. Glad I picked two winners in my book!

this has been on my "to try" list. I love both tapioca and apricots, but never would have though to put the two together. THanks for the great review- I'm inspired to try it tonight!!
