Hi. I'm new to the board, and am excited to see such a great group of like-minded people. I noticed that that July issue is not a popular favorite, and wanted to share one recipe I found in it that's just great--but a big suprise: The Chipotle-Maple Sweet Potatoes. They were tasty as a side dish, and I've also used them in quesadillas (with chopped onions, a little lite cheddar, and fat-free sour cream--yum) and a made-up Mexican casserole. Just the right mix of sweetness and spice. You never know...

Hi Bonnie, welcome to the board! I really like your idea of using the sweet potatoes in quesadillas. I think I'll try that. Does anyone know if I could make a batch of these and then freeze them?

Thanks for the feedback on the sweet potatoes- yet another recipe on my list from this maligned issue. I bought sweet potatoes last night with this recipe in mind and I love your quesadilla idea.

I just put these on my weekly menu (we'll see how long this lasts) for Wednesday. I thought I'd make them with the chicken with Orange/Chipotle Sauce. I thought it might be too much heat, but we like everything kicked up a notch, so I think it will be hot. The jalapeno corn bread I'm going to do with it might be overkill, though. If you don't hear from me any more after Wednesday night, you'll know we've all expired frome excessive heat in our food.

We have to find some way to keep warm. We have a massive cold front sweeping through--it's only 100 degrees here in Phoenix! http://www.cookinglight.com/bbs/eek.gif

I too thought the sweet potatoes were great. I used the yellow ones (Jewel, maybe) as I prefer them to the orange. Yum.
