...and my SO and I live in the states, so we are having our own celebration. I need some suggestions to inspire feelings of the Great White North. I'm thinking of whipping out the Nanimo Bar recipe and indulging, however I was wondering if I could get any suggestions for dinner. I was thinking maybe a Maple roasted salmon using REAL maple syrup,lol. Anyway, any suggestions would be greatly appreciated. Thank you!

I think one of my favourite (albeit tacky) Canada Day things is the cake that Kraft (?) did for Canada 125 with strawberries. My mom makes it every year. It's a white cake in a 9x13 pan, iced with whipped cream, and using sliced strawberries to form the flag on top. Not light, not hard, but really yummy!! http://www.cookinglight.com/bbs/biggrin.gif
How about poutine? Or a tortiere? (Both Quebecois faves!)
And of course, if you drink, you could have some Niagara or BC wine!
