View Full Version : ISO: Favorite low-point snack or dessert recipes

I recently joined WW, and tomorrow night is our last meeting at our current location. They are opening a center nearby and discontinuing our meeting. It's also our "one-ton" weight loss celebration. Every one was asked to bring a low-point snack in. I'd like to make a CL recipe. Any ideas?

here is a really low point pie recipe i found in an old WW magazine(when they were still CL recipes). It makes 6 generous pieces for only 3 points each. I have not had chance to make it yet but it looks very easy.

CRISPY PEANUT BUTTERSCOTCH PIE

1/4 cup peanut butter
1 tbsp honey
1 1/2 cups rice krispies cereal
1 (1 oz) pkg fat free,sugar free instant butterscotch pudding mix
1 1/2 cups fat free cool whip(thawed)
ground cinnamon(optional)

1. combine peanut butter and honey in a med. size microwave safe bowl and microwave for 30 seconds on HIGH. then stir till mixture melts. stir in rice krispies. Press cereal into bottom of 8 inch round cake pan using wax paper.
2. Prepare pudding mix according to pkg directions and fold in 1 cup of the cool whip. Spoon into prepared pan. Cover and freeze till firm. let pie stand at room temp 15 min before serving. spoon remaining cool whip over each serving.Sprinkle with cinnamon and rice krispies if desired.

Biscotti is nice and this one is only 2 points per cookie. These are very good!

Toffee Biscotti

2 3/4 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup packaged almond toffee bits
1/2 cup brown sugar -- packed
2 teaspoons baking powder
1 tablespoon vegetable oil
1 teaspoon vanilla extract
3 large eggs
cooking spray

Preheat oven to 350 degrees

Lightly spoon flour into dry measuring cups, and level with a knife. Combine the flour, granulated sugar, toffee bits, brown sugar, and baking powder in a large bowl. Combine vegetable oil, vanilla, and eggs; add to flour mixture, stirring until well-blended (dough will be dry and crumbly). Turn the dough out onto a lightly floured surface, and knead lightly 7 to 8 times. Divide dough in half. Shape each portion into an 8-inch long roll. Place rolls 6 inches apart on a baking sheet coated with cooking spray, and flatten each roll to 1-inch thickness.

Bake at 350 degrees for 35 minutes. Remove rolls from baking sheet; cool 10 minutes on a wire rack. Cut each roll diagonally into 15 (1/2 inch) slices. Place slices, cut sides down, on baking sheet. Reduce oven temperature to 325 degrees; bake 10 minutes. Turn cookies over; bake an additional 10 minutes (cookies will be slightly soft in center but will harden as they cool). Remove from baking sheet; cook completely on wire rack. Yield 2 1/2 dozen (serving size: 1 biscotto).

No formal recipe, therefore no idea of the points... but this would have to be LOW (I would think!) I just threw this together at the last minute last night from what I had on hand, and DF (family) pronounced it a "10"!!! http://www.cookinglight.com/bbs/smile.gif

Toss fresh blueberries and sliced fresh strawberries with a SMALL amount of brown sugar. Sprinkle w/ coconut and granola (I used a low fat cereal) and serve. Delicious!
