Chicken with 2 olive topping /June 2001

This recipe is found on pg 104 of the June issue. I loved this recipe because of the all the different colors and the olives. MMMMmmm i love olives. So this recipe had to be made. Fresh rosemary added to the fragrance and flavor of this dish. this was a quick and tasty recipe.

i just made a baked potato and sliced some fresh tomatoes. Nothing extravagant. As you can see I am not to creative with side dishes either.

If you like olives and roasted peppers, this is a great dish. My DH gave it a 9.3/10. It is indeed very colorful and easy to make. I served it with couscous and the Roasted Corn, Black Bean, and Mango Salad (July '00).
