I just tried this recipe from July 2000 and we really loved it! The sweet/tart taste of the mango was an excellent contrast to the hot chipotle pepper, bland beans, corn and tart dressing. It will go in my repeater files.

Funny that you chose this recipe too, Elinor. I'm making it today to take to my in-laws for a cookout. I couldn't find canned chipotle chiles in adobo sauce at my market. I wonder if I should substitute jalapenos in a jar or I have dried chipotles I could reconstitute? Any opinions out there?

Hi Lauren,
I have not tried this recipe, however, I do know there is a big difference between dried chipotle's and canned. The canned have a smokey flavor, from the adobo sauce, I guess. I don't think that jalepeno's would be the same either, but I don't know how it would affect the recipe. Hope this helps!

I am guessing, add some liquid smoke? I haven't made this recipe yet but do agree with Kathy that there is a big difference.
P.S. I have two cans in my pantry, wish I could send them to you...

Thanks Kathy and Susan! For future use, where do you find these chiles in your market? I looked in the ethnic section, but maybe I was in the wrong place. I'll have to make a trip to our Trader Joes's to see if they carry them. Thanks for your help! http://www.cookinglight.com/bbs/smile.gif

I posted a review on this about a week ago, and I thought it was awesome! The only thing I want to add is, as I mentioned in my earlier review, I left out the chipotle pepper all together, because I served it with Chipotle-Lime marinated flank steak, and I didn't want to over do the chipotle thing. But even without the chipotle, the salad was STILL awesome. So I'd say, if you don't have it, rather than substitute, just do without. Still a WINNER recipe, for sure.

Lauren, I think they would be in the ethnic section if your store carries them. Problem is that not all stores carry them. Especially not all stores (or any stores for that matter) in my area (CT). You can get them online at www.ethnicgrocer.com (http://www.ethnicgrocer.com) and at other places. I don't have a TJs near me, but from all the great things I have heard, I bet they have them.

This is one of my favorite recipes of all time! I made it for a 4th of July party last summer and it was a hit, so now it's become a regular dish in my home. I use diced pickled jalapeno rather than chipotles, and it is quite yummy that way too!

I made it yesterday with the reconsitituted dried chipotle. Everyone loved it! A definate keeper.

I just tried this recipe tonight for the first time and it was really good...maybe a little dry my tastes with the lettuce...a splash of olive oil and some extra lime juice on the leaves before adding the corn-bean mixture fixed me right up though!! My husband forgoed (is that a word?) the lettuce altogether and used the corn-bean-mango mixture as a salsa with chips which would work just as well if you dice up the mango enough.

One thing I really liked about this recipe is that the portions are big!! and the calories and fat aren't. I couldn't finish mine...gotta love that!! http://www.cookinglight.com/bbs/cool.gif

Another worshiper of this salad! I FINALLY made it tonight, nearly one year after the recipe first appeared. Why did I wait so long??? It is indeed wonderful!
