Here it is, sorry for the long delay.

Peach Ice Cream
Eating Well Magazine

3 cups sliced peaches (6-8 medium)
2 Tablespoons fresh lemon juice
1 1/2 cups Marshmallow Fluff or Creme
1 cup fat-free milk
2 teaspoons Amaretto or 1/2 teaspoon almond extract

In a food processor, puree peaches with lemon juice. Transfer to a bowl. Add Marshmallow FLuff or Creme and mix with a whisk until as smooth as possible. (The mixture wil be a little lumpy; the lumps will break down during stir freezing) Add milk and amaretto and mix well. If necessary, chill until cold.

Pour into ice cream maker and freeze according to manufacturer's instructions.

Tip: If serving this directly from the ice cream maker, add an extra cup of chopped peaches to the mix just before stir freezing.

6 servings

235 calories; 3 g protein; 1 g fat; 57 g carbohydrate; 47 mg sodium; 2 mg cholesterol.

Thank you AvrilH! What issue are these ice cream recipes in? I just recently acquired some from Ebay and waiting for them to arrive.

Thanks for the recipe. I hadn't noticed any wait as my 7-month old grandson was visiting and he takes most of my time and attention.

By the way, what is the difference in Marshmallow Fluff and Creame?

This was in an EW book - New Classics I believe. I (sadly) have no EW magazines, but gratefully received 3 of their cookbooks from my mother.

BTW - the recipe recommended serving this with an almond cookie of some sort.
