View Full Version : Fewer Muffins than the recipesays...

I never seem to get the number of muffins out of a recipe that it says it makes- especially the CL ones. For instance I just popped a batch of the Strawbeery-Orange Muffins (May 2000) in the oven and I only got 8muffins!! My muffin tin seems to be a pretty standard size and of course I followed the recipe exactly. Just wondering if anyone else has this happen to them As I said it does seem more common with CL recipes!!

I never get as many muffins as a recipe says. If it says 12 I generally get 8 or 9.

I get 12 muffins out of the CL recipes, they are just not very big ones. When I spoon the batter in the muffin cups, the cups are not completely filled. When cooked, the muffins have small tops (like an umbrella), nothing like the supermarket ones that are mostly tops. But they are light and fluffy and not overly sweet so I prefer them over the store-bought ones.

Kima, when you make only 8 muffins out of the batter, do they come out bigger? Does the cooking time need to be adjusted? Do they come out denser? Thanks for any info; I wouldn't mind having bigger muffins! http://www.cookinglight.com/bbs/smile.gif

Hi Luiza! I guess my muffins are larger- but they do not need extra baking time and they always turn out just fine 9well okay I have had my duds but I think that is the cook faults not the muffin size). I feel the muffins I get are of "normal" size- no where near the size of the ones you get at muffin shops. I also get fewer cookies than most recipes call for!!

I always have that problem. I just made the Heavenly Apricot Cobbler Bars last night (which are really good by the way). The recipe says it makes 24 bars. I ended up making 12, and even then the bars are small. I can't imagine how tiny they would be if I made 24!! But at 90 calories for 24, 180 calories for 12 still isn't bad.
