Last night I needed a side dish, I had lots of veggies getting dangerously close to going by, and I happened to see the green bean thread that suggested marinating them in garlic and olive oil and grilling them.

Oh...my...gawd!

I chunky sliced up some red potatoes, red onions, and zucchini, halved some mushrooms, and tipped and tailed the green beans. Then I marinated them in a little oil and a lot of garlic, some fresh cracked pepper and some kosher salt (which, incidentally, seems to have gone MIA at all our local grocery stores and I'm running out!).

I know I've had (and made) grilled veggies before but I just didn't remember them being this good. So flavorful. Sometimes the simplest of ingredients /recipes / techniques can result in the most pleasurable food. Wish I would've made more. They could've been the entree.

I love this BB! Without it I don't think I would've tried this or scores of other recommended recipes.

This is one of my favorite ways to deal with an overload of vegetables from the garden! Sometimes I cut them into bite-size pieces, marinate in vinaigrette, grill, and serve over rice.

I had never thought of grilling green beans before I read that thread but will definitely try it.

ok, I have done the same with vegetables and roasted them on a cookie sheet in the oven. What do you put them on to grill them? I would think they would fall thru the grill by themselves?

I have roasted them on a cookie sheet as well and that works great.

My favorite is to make kebobs of cherry tomato, red onion, zucchini, mushrooms (and sometimes parboiled new potatoes)and pour Italian dressing over them and put on the grill. Yum!! Am looking forward to trying the green beans.

Nancy, I like to use skewers but there are special racks to use on the grill.

There is a new product out, by Reynold's, I think, that you put on the grill...it is like aluminum foil with slots cut into it. You put it on the grill and the veggies won't fall through. I haven't tried it, so I don't know how well it works.

when you put them on the grill, how hot is it and do you heat one half and grill on the other? I have a gas grill outside and a Jennaire inside. Thanks, Nancy

I actually used a couple of small, inexpensive cooling racks sprayed with olive oil spray.

I use a grill basket that I bought from Walmart for $3 or $4. I only light half of the gas grill, set the flame to medium and put the basket on the second rack.

There is nothing quite like grilled veggies. I used to buy baby carrots to snack on at work. Now I grill whole carrots and bring those instead. They taste like candy. http://www.cookinglight.com/bbs/smile.gif

I love my grill basket. If there are any leftover grilled veggies, I throw them in a salad.

I just wanted to thank everyone for the idea of grilling green beans - never would have thought of it and WOW - never had such good green beans. I just sprtized with olive oil and sprinkled with pepper and (sea) salt. We have a grill sheet - rectangular with holes in it that works pretty well for veggies (not much of a lip so we lose things occaisonally). We grilled for 10-12 minutes over direct/medium heat until they we're browning. I was surprised that my grill's manual actually listed green beans (with the above directions).

I love this time of year!

I too have a Jennair grill (gas) on my cooktop. I have used it only a few times.
The cleanup is horrible, and I don't seem to get the same savory results as the bbq outside. Any suggestions? I also have the griddle! Usually I just keep the second 2 burners on the top!

the green bean idea is something i have never thought of! how exciting!

i have the round silver george foreman indoor/outdoor grill & it is perfect for veggies since there are no holes for them to fall through. and w/the nonstick surface, i do not have to worry about anything sticking.

the simple marinades do give the best outcome sometimes.

these work wonderfully. The best part is no cleanup! They're really large and cover most of any size grill.

I use one of these for grilling my veggies, except mine is black and coated. I got it at Home Depot, and it was free. The girl was to lazy to look up the price, even though I told her it was $9.97 and she just gave it to me. :rolleyes:
Anyhow, it works great. I usually just do a marinade of olive oil, garlic, salt, pepper, and balsamic vinegar. Tonight I added some fresh rosemary. Yum. If I'm eating Mexican, I omit the balsamic and add some cumin and mexican oregano.

Isn't it funny how the simple things are sometimes the best? I love to toss 'kitchen sink' veggies in a grill basket with a sprinkle of olive oil and a dash of kosher salt, and then grill them. Last night we had asparagus that way, and it was a-MAZ-ing. The grill basket is great for fish, potatoes, veggies, anything you don't want to fall through. Mine is stainless, and I got it from Amazon.com.

Agreed. One of my favorite summertime meals is grilled marinated portobello, fresh corn on the cob, sliced tomatoes and fresh mozzarella with some fresh french or sourdough bread (even better if it's grilled as well).
Of course, this isn't a meal that my DBF would be happy with. It needs meat! :rolleyes: I love it though.

It looks like a grill basket is in order as I have been having fun with my new bbq. Last night, I made veggie kebabs with red onion, zucchini, grape tomatoes and mushrooms and basted them with a little Italian dressing. I also parboiled small red potatoes and marinated them in a bit of garlic, fresh rosemary, lemon juice and olive oil.

jjsooner, I once got a free plant at Home Depot because the checker kept calling for a price check and after 10 minutes of no one responding, he gave it to me and said Merry Christmas. :rolleyes: ;) I also love bread with fresh mozzarella, sliced tomatoes, and basil, drizzled with a little bit of olive oil.

Heidi, I believe that my DH buys his Kosher Salt for pickling at Smart and Final. The closest one I saw to Gilbert is at 60 S. Stapley Drive (480) 649-7025. I if you checked there....you would find it.
